Is anyone else swimming in zucchini right now?

If your garden, farm stand haul, or generous neighbor has left you wondering what to do with it all, these Chocolate Chip Zucchini Muffins are a pretty sweet solution. Made with ripe bananas, oats, peanut butter, chocolate chips, and pure maple syrup, they’re a great grab-and-go breakfast or snack.

Chocolate Chip Zucchini Muffins

Makes 12 muffins

Ingredients:

6 very ripe bananas
4 cups rolled oats
1/3 cup pure maple syrup
1/3 cup smooth peanut butter
1/2 tsp vanilla extract
1 tsp baking soda
1 tsp baking powder
1 cup shredded zucchini
1 tsp cinnamon
1 cup dark chocolate chips
1/4 tsp nutmeg
1/2 tsp salt

To make:
Blend the oats into a flour-like consistency and combine with the dry ingredients. Mash the bananas, then stir in the zucchini, maple syrup, peanut butter, vanilla, and chocolate chips. Add the dry ingredients and mix until just combined.

Scoop into a prepared muffin tin and bake at 350°F for about 30 minutes, or until golden brown.

A little zucchini, a little chocolate, and plenty of maple sweetness—just the thing for this time of year.

Looking for a fresh lunch idea with a Vermont maple twist? 🍁🥪🥗

This Smashed Chickpea Salad is quick to make, packed with plant-based protein, and gets just the right touch of sweetness from pure maple syrup. Serve it piled high on your favorite sandwich bread or spooned over a bed of fresh greens for an easy lunch or light dinner.

Bonus tip: Add a handful of roasted sunflower seeds for a delicious crunch!

Smashed Chickpea Salad

🥄 15 oz can chickpeas, drained and rinsed
🥄 3 Tbsp vegan mayo, tahini, regular mayo, or a mix
🥄 ½ tsp mustard
🍁 1 Tbsp pure maple syrup
🧅 ¼ cup diced red onion
🌿 2 tsp dried dill
🧂 Salt and pepper, to taste

Directions:

Lightly mash the chickpeas with a fork or potato masher.
Stir in the remaining ingredients until well combined.
Taste and adjust—add more maple for sweetness or mustard for extra zing.
Enjoy on sandwiches or over fresh greens.

Fresh-squeezed lemons, pure maple syrup, cold water, and your favorite herbs like rosemary, lavender, or sage are all you need for a drink that’s perfect for picnics, porch sitting, and sunny afternoons.

Maple Lemonade
• 5 cups water
• 1¼ cups fresh-squeezed lemon juice (5–6 lemons)

🍩 Happy National Donut Day!

For many Big E visitors, a warm donut topped with Vermont maple cream is more than a treat—it’s a tradition.

This photo features Kenn Hastings, VMSMA Board Member, sugar maker, and one of the dedicated producers who helps make the maple cream sold at our Big E booth possible. Over the years, we’ve served thousands of these maple-topped donuts to fairgoers from across New England and beyond.

Whether it’s your first visit or an annual pilgrimage to the Vermont Building, we love seeing people return year after year for their favorite maple memories.

Rhubarb season is here, and there’s no better way to enjoy it than with a little Vermont maple!

This simple Maple Rhubarb Jam is sweet, tangy, and perfect on toast, biscuits, yogurt, pancakes, or even paired with cheese. With just a handful of ingredients and no refined sugar, it’s an easy way to celebrate two classic spring flavors.

MAPLE RHUBARB JAM

What you’ll need:
• 2 cups rhubarb, chopped
• ½ cup maple syrup
• 2 Tbsp lemon juice
• 1 Tbsp powdered pectin
• Pinch of salt
• ½ tsp ground cardamom

Directions:

1. Combine rhubarb, maple syrup, lemon juice, pectin, and salt in a medium pot. Bring to a boil and cook for 1–2 minutes.
2. Reduce heat to medium-low and simmer for 20 minutes, stirring occasionally.
3. Remove from heat and stir in ¼ tsp cardamom. Cool completely, then adjust seasoning with remaining cardamom if desired.
4. Transfer to a jar and refrigerate for up to one week.

Headed into the woods this weekend? Or to some summit somewhere high above? Don't forget the maple!

Maple syrup is an excellent energy booster, complete with antioxidants and complex sugars that take longer to break down in your system than other sugars. It's the perfect excuse to take a swig of liquid gold from wherever you adventure to today, or any day!

Our friends at Butternut Mountain Farms have an excellent blog post about it that you should read if you're looking to add a little extra maple-y hit to your favorite summer beverage!

Next time you order at the bar, make sure you tell them to "make mine with maple!"

(Pro tip: not into alcohol? No problem - make it a mocktail and remove the booze, replace with sparkling water, your favorite seltzer, or a mixer of your choice!)
