When it comes to leafy greens, most people think of spinach and kale. Arugula falls further down the popularity chart, yet it make its dishes spicy and delicious, and is perfect for spring 🌱 This dynamic green is high in both and beneficial which are compounds in plants that contribute to their color, taste and smell. Arugula is also full of which can reverse damage to your cells. We could honestly put it in or on just about everything, but to really allow it’s flavors to shine love making an arugula 💚

Today’s is a lucky 🍀 one that also commemorates In the second half of the 19th century, Chicago was one of the fastest-growing cities in the world. Its population boom came with unfortunate side effects, including waterborne diseases. The problem was that the city’s sewage flowed into the Chicago River, which in turn emptied into Lake Michigan — the source of the city’s drinking water.
If the city’s river could just flow away from Lake Michigan and empty into the waterways leading to the Mississippi, Chicago’s water problem would be solved. If the city dug a ditch lower than both the lake and the river through the divide, gravity would take it from there. Workers began the laborious process of reversing the Chicago River in 1892. After eight years of digging Chicago blew up the last dam on January 2, 1900 and in this incredible feat of human engineering the Chicago river flowed backwards. Each year to celebrate St Patrick’s, the backyards-flowing river is dyed green 💚

In honor of later this week, our of the week is - you guessed it, ! Half a cup of cooked cabbage has about a third the vitamin C you need for the day. It also gives you doses of fiber, folate, potassium, magnesium, vitamins A and K, and more. You can make cabbage even healthier by it! Just leave it in its own juices until start to feed on it. Sound gross? You’ve probably already eaten it. It’s called sauerkraut. So whether you’re having some corned beef and cabbage or eating a - the will be with you if you’re eating cabbage! 🍀 🇮🇪
