A MONTH OF HEALTHY MEALS (m-f) pt.1
Crockpot Street Corn Chicken!
Ingredients:
•2 large chicken breasts
• 2 cups Corn: I used frozen & roasted
• 1 lime - juice (2 for garnish)
• 1/2 tsp Paprika, Smoked
• 1/3 cup Queso Fresco
• 4 oz Cream cheese
• everything but the elote seasoning from
Trader Joe’s
What I would add next time:
• 1/2 tsp Onion powder
• 1/2 tsp Chili powder
Add ingredients to crockpot and cook on low for 4-5 hours - then I shredded the chicken.
