We welcomed back some amazing bakers in Level 2 Baking Camp! Beautiful macarons, flaky croissants, Bavarian cream and so much more this week!

Final day of culinary camp level 2 and there was a lot to be done! We had to finish up the meal and set up the tables and decorate! Overall a very successful week! These campers were amazing and we enjoyed having them here! We hope to see them again soon!

Day 4 in culinary camp 1..... wonderful day making beef stew and banana pudding

A day in Spain with two different types of Paella. One with shellfish and one vegetarian. We also had Gazpacho and Poached Pears with a Coffee Caramel sauce and a Marscapone whipped cream. Each day these students amaze us with how well they have done! We cannot wait for the family meal with the parents tomorrow and they can show off what they have produced this week!

It was Italian day today and we were busy making ravioli served with either pesto, marinara or meatballs! Then we had a great caprese salad with homemade mozzarella and for dessert we had Tiramisu.

Second day of culinary camp 1..... Mexican day, nothing better than enchiladas and Celia’s rice.

Amazing day 2! Cutting steaks, making mayonnaise for Mexican street corn to go with our coconut rice and beans, chimichurri and prawn chowder! But I think everyone’s favorite was the banana cake.

Level 1 culinary camp week 3! Day one. Lookin good there everyone!

First day of summer culinary camp level 2- that would be German day! Schnitzels, german potato salad, red cabbage and apples and Currywurst. We even found out today was apple strudel day! Yea, we planned that😂.

Level 1 Cake campers finished up a week of butttercream piping, watercolor frosting, ganache drips and painted fondant decor!

The first week of the level 1 Kids Baking Camp is in the books, what a great job by all the campers! Breads, cookies, custard, pies and cakes...they had a busy and delicious week!

ACF Central Arkansas Cooks Association

Our #acfchefs chapter Chef, Student Chef and Pastry Chef of the Year competitions were held today! Congrats to all our chefs on a great job in the kitchen- winners will be announced at the Chefs Ball in September!

Students Regina Cornish, Scott Strzelecki and Thomas Robertson competed for the ACF-CACA chapter Student Chef of the Year today- beautiful presentations by all, way to represent CAHMI!

Our last Food 3 service this week ended with a bang! We had an appetizer of Spicy Stuffed Mushrooms. Our entree was Veal Oscar with Roasted Potatoes, Chive Oil and Demi Glacé. For dessert we had an Oatmeal Cookie with Ice Cream and Butterscotch Sauce! What a way to end the semester!

OCCHS alumna and Tiny Baker owner Ana McWilliams Edmaiston spent her Monday with Mrs. Michelle Bruner’s Culinary Arts classes where she was a student just a few years ago. What a sweet treat! Ana demonstrated some of her techniques she learned at University of Arkansas- Pulaski Technical College. Ana is the owner and operator of the bakery “Tiny Baker” in downtown Union City.

The first group of Adv. Pastry students presented their plates for the Student Pastry Chef of the Year competition! Beautiful and creative work completed in 90 minutes- CONGRATS and we look forward to another round of platings next week!

A few of our graduates, King, Jonathan and Billy, are with Chartwells recruiting for different positions throughout the state! Find them downstairs by the Celebrity Chef Theatre until 1pm and learn more about it!

Today was the last class in our Caking with Kids series- fondant covered bunny cakes! What a wonderful job by all the kids, they were a joy to work with! #kidscancake #fondant #bunnycake
