I’m so excited for this!!! When they first toyed with the idea of a Gin I was IN! Stopped in for a drink with the Mrs and walked out with a bottle! Smooth, easy drinking, good balance of botanicals I’m more than half way done and I’m looking for more. Good job this will be a staple in the house!

Testing the Porter for taste! Decided to pull the oak chips out to avoid the over powering flavor. This taste good the smell is even better. Not overly boozy, I don’t think this gain a whole lot in terms of ABV but taste great. I will test the control batch tonight!

Racked my Porter off today. Got about 4.25 between the two. Not evenly split but close enough. The 5g keg will be the straight up Porter. While the small guy has the oak chips and bourbon that was left soaking since 2017. I’ll leave it in there for a day or two. Not sure if I want to temp it any more than that. Should be fun either way.

Three days….three days to drop from 1.064OG to 1.014FG posting a 77% attenuation with an estimated Abby of 6.5%. Man I do love imperial yeast lol
I will let this ride for a few more days. Cold crash and rack to a keg. I will rack some off to bottle and some to throw on that eagle rare oak chips.

Everything is moving along just in time for a brew day!!!! Tested out the new set up and found a small leak but rather it be now then on brew day. This Porter will be dosed with some oaked soaked in bourbon since 2017. Hopefully it’s not too overwhelming fingers crossed 🤞🏼
