Today we introduced our new Carnival Coleslaw at lunch —a fresh, colorful recipe developed by talented 3rd grade Garden Club students at Vista Del Sur as part of the Blue Watermelon Project's Feeding the Future initiative! The students were tasked with creating a healthy, delicious, and affordable school menu item kids would want to eat. The recipe contained cabbage, carrots, radishes, and apples, mixed with a lemon yogurt dressing. It quickly became a hit as students realize it wasn't your traditional coleslaw and overwhelming voted that it tasty "YUMMY."
We are proud to serve up a recipe that is made by students, for students and truly reflects the next generation's commitment to healthy eating.

April is full of hypothesis, experiments, and conclusions as 4th-8th grade students investigate science projects. Their work is just the beginning of a lifetime of amazing findings.
Congratulations to our 1st place Science and Engineering Fair participants. They will go on to represent Vista at the District Fair next week. Good Luck!

In February, the Garden club planted green onions. At the end of March, they were able to harvest them and make a delicious onion dip. It has been so much fun to watch them taste and enjoy food they grew themselves. They loved it so much, some even made it at home.
