A great read on dairy intolerance...
I came across a well-written article that breaks down dairy intolerances. Many of you may be familiar with the different types, and levels of intolerance, or what can be considered an allergy. This article explains the differences, and has a few suggestions on how you may be able to rebuild your âgut healthâ or play detective to find out which foods you can tolerate.
I have been tested for lactose, and casein sensitivities. I found out almost 2 years ago that I had intolerance to casein. Casein is a protein that is found in milk products, such as kefir, yogurt, cheese, and cream. Lactose is a sugar that is in all dairy products. You may have heard of lactose intolerant? That is when you have an intolerance to the sugar lactose in dairy. The article states: that almost 50% of the worldâs population has some sort of intolerance to dairy. That is a lot!!!
What had led me to this article was that, I just checked out this great book from the library on fermented foods. There are so many recipes I would like to try in there but many require adding whey to them to create the culture that is needed to ferment. I was thinking that I wouldnât be able to do this because of my intolerance to dairy. This is what led me to begin my search on the google highway. I landed on a few different articles to answer my questions. This is the best one that I found thus farâŠ
The conclusion I came up with is that whey is the least reactive form of dairy, and contains little to no casein. Fermented foods may help restore your gut health, and this is the biggest component of finding true health. If our digestion system works properly than we can assimilate more nutrients, and vital energy in our bodies!
So hopefully this helps someone else understand this information better too! If anyone has had experience in this matter please share I would love to hear from youâŠ

Nutritious Nettles: A Foraged Risotto Recipe
Nettles are out!! Spend time with sister nettle... invite her into your life, add her to tea's, pesto, soups, or, perserve her, and make a tincture, or tonic:)
Last year I transplanted a bunch for friends, and planted a few in my garden, but when I was away in school, my uncle pulled them up because he thought they were pesky weeds... NOOOO not pesky... Grand! Amazing, perfect nature food, but never pesky!!! So I ask any friends, if they have any nettles that survived and are healthy, could you fix me up with a sister nettle?
OR does anyone know where there is wild nettles growing in Ketchikan, or Metlakatla... besides peoples yards!!

Guide to Diluting Essential Oils
I have had some questions on using essential oils neat. The company doterra trained me that it was ok... and so I tried it out and trained others to do it as well. Once i started to look into aromatherapy on the professional level I have found that it is Not ok to use the oils neat... It makes so much sense to me. Thinking about the potential skin sensitization that could develop, and let's not forget about the environmental issue.... Have you seen how many lavender flowers are needed to produce a single bottle of lavender? Let's be safe, respect the plant world, and in turn they will respect us:) http://www.aromaweb.com/articles/dilutingessentialoils.asp
