The fire isn’t the flame. 🔥
Pitmaster confession: when I was newer, I chased dancing flames like they were the goal. They’re not. The coal bed is what cooks your food. Flames are just the drama.
On an offset, I’d rather add smaller splits more often and protect that clean, steady bed of coals than throw in a log the size of a fence post and spend 20 minutes fighting dirty smoke. Good fire management is boring in the best way: thin blue smoke, steady airflow, predictable temps, and meat that tastes like smoke instead of a campfire accident. 🪵
