Crispy Fish Tacos with Cilantro Lime Slaw 🌮🐟
These crispy fish tacos topped with a zesty cilantro lime slaw make for a refreshing and delicious meal!

Ingredients:
For the Fish:

1 lb white fish fillets (tilapia or cod)
1 cup all-purpose flour
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp cayenne pepper
Salt and pepper to taste
1 cup buttermilk
Vegetable oil for frying
For the Cilantro Lime Slaw:

2 cups shredded cabbage
1/4 cup fresh cilantro, chopped
2 tbsp lime juice
2 tbsp mayonnaise
1/2 tsp honey
Salt and pepper to taste
For the Tacos:

8 small flour tortillas
Lime wedges for serving
Instructions:
1. Prepare the Fish:

In a shallow bowl, mix together the flour, garlic powder, paprika, cayenne pepper, salt, and pepper.
Dip the fish fillets in the buttermilk, allowing any excess to drip off, and then dredge the fish in the seasoned flour mixture until well coated.
Heat vegetable oil in a large skillet over medium heat. Fry the fish fillets for 3-4 minutes on each side, or until golden and crispy. Drain on paper towels.
2. Make the Cilantro Lime Slaw:

In a large bowl, combine the shredded cabbage, cilantro, lime juice, mayonnaise, honey, salt, and pepper. Toss until evenly mixed and set aside.
3. Assemble the Tacos:

Warm the tortillas in a dry skillet or microwave.
Place a piece of the crispy fried fish in each tortilla and top with a generous amount of cilantro lime slaw.
4. Serve:

Serve the tacos with lime wedges for an extra burst of citrus.

Cook Time: 10 minutes

Angel Chicken Rice Casserole
Ingredients:
🍗 3 cups cooked chicken, diced or shredded
🍚 3 cups cooked rice
🧈 ½ cup butter, room temperature and cubed
🧀 8 ounces cream cheese, room temperature and cubed
🥫 10.5 ounces cream of chicken soup
🧄 3 cloves garlic, minced
🌿 0.7 ounce Italian dressing mix (e.g., Good Seasons)
🍗 1 cup chicken stock
🧀 2 cups shredded Colby Jack cheese, divided
🧂 Salt and pepper to taste
🌿 Fresh parsley for garnish

Instructions
Preheat Oven: Preheat your oven to 350°F (175°C) and generously spray a 9x13” casserole dish with cooking spray.
Soften Cream Cheese and Butter: In a microwave-safe bowl, soften the cream cheese and butter in the microwave for 20-30 seconds. Whisk until smooth.
Mix Ingredients: In a large mixing bowl, combine the cooked chicken, rice, softened butter and cream cheese mixture, cream of chicken soup, minced garlic, Italian dressing mix, chicken stock, half of the shredded cheese, and salt and pepper. Mix well until evenly combined.
Transfer to Casserole Dish: Transfer the chicken and rice mixture into the prepared casserole dish.
Add Cheese: Top with the remaining shredded cheese.
Bake: Cover the dish with foil, and bake in the preheated oven for 20-25 minutes, until the cheese is melted and the casserole is bubbling.
Cool and Garnish: Remove from the oven and allow the casserole to cool for 5 minutes. Remove the foil.
Serve: Garnish with fresh parsley and serve hot. Enjoy!
This hearty casserole is perfect for a comforting family meal, served with a side of steamed vegetables or a simple green salad.

KFC Potato Wedges

Ingredients:

3 pounds Russet potatoes
2 cups all-purpose flour
1 1/2 cup milk
1 egg
2 teaspoons salt
1 teaspoon garlic salt
1/2 teaspoon onion powder
1 tablespoon ground black pepper
1 teaspoon poultry seasoning optional
oil for frying

Instructions:

Wash potatoes well, and cut into small wedges. The wedges should be no larger than 3/8 of an inch thick at the outside of the potato. Ideally, the potato wedges should be cut as uniformly as possible.
Place the potato wedges in a large bowl and add enough water to cover the potatoes. Allow the potatoes to soak for at least 1 hour (best overnight).
Combine milk and egg in a small bowl. Whisk together to mix the egg fully into the milk.
In another bowl, combine flour, salt, garlic salt, onion powder, black pepper, and poultry seasoning.
Heat oil to 350 degrees.
Dredge the potatoes in the flour, then dip into the egg wash, and then back into the flour.
Place the breaded potatoes on a wire rack on top of a baking sheet to allow them to dry. The coating will set up and stay on the potatoes better if allowed to set for 5 to 10 minutes before frying
Fry potatoes in batches for 5 to 6 minutes, remove and place on a wire rack to drain.
After the first cooking time, place each batch of potatoes back into the oil for another 3 to 4 minutes. This second cooking will result in potatoes with a very crisp outer coating. When removed for the second time drain on the wire rack, and then serve immediately.

A great idea for the Schoolers to do

2-Ingredient Pizza dough

So easy and my family loves. I tried the flat bread recipe, now, it’s time for pizza. It turns out delicious and chewy. No yeast needed!

Recipe:
1 1/2 cup self-rising flour
3/4 cup Greek yogurt

Mix the ingredients well and form a ball. Knead for 3-5 minutes. Roll and flatten it into 12 inches round or square.

I use square pan to cook it and brown on each side like naan bread.
Then, add your favorite toppings. Bake it at 400 F for 12-15 minutes. Enjoy!
