Pro Tip: Do one thing on a Monday that helps you eat healthier all week long!
I cooked a batch of quinoa between work calls today. Iβll add a scoop to salads, side dishes, quinoa (instead of rice) bowls, etc.
My dinner at the baseball field tonight consisted of 1/2 c quinoa, 1/2 c black beans, 1/2 c salsa, avocado, lettuce, olives, sunflower seeds. Random mix at the end there but gosh was it so good. I also added about a tablespoon of prepared good seasons salad dressing to bring it all together.

Have you tried Palmini noodles? WOW! I made this ground chicken stir fry with them tonight and am impressed! Great way to increase your veggie intake π
It also took about 15 minutes to make ππ

Salsa chicken bowls for dinner tonight!
Season three chicken breast liberally with salt, pepper, cumin, onion powder and garlic powder on both sides. Place in a slow cooker. Add one jar of thick and chunky salsa and cook on LOW for 2 hours. Shred the chicken with two forks and put back in crockpot.
Tonight I served with air fried sweet potatoes (season liberally with olive oil, salt, pepper, cumin, onion powder and garlic powder; air fry on 400 degrees for 20-25 mins), black beans and homemade guacamole. π₯
Note: this salsa chicken makes a TON of shredded chicken. Iβll use leftovers to make a Tex-Mex casserole this weekend!
