Easy cupcake recipe

Here's a simple, fluffy vanilla cupcake recipe that's perfect for baking with kids.
Easy Vanilla Cupcakes

Makes: 12 cupcakes
Ingredients
1½ cups all-purpose flour
1½ teaspoons baking powder
¼ teaspoon salt
½ cup (1 stick) softened butter
¾ cup sugar
2 large eggs
2 teaspoons vanilla extract
½ cup milk

Instructions
Preheat oven to 350°F (175°C) and line a muffin pan with 12 cupcake liners.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, beat the butter and sugar until light and fluffy (about 2–3 minutes).
Beat in the eggs one at a time, then add the vanilla.

Add half of the dry ingredients, then the milk, then the remaining dry ingredients. Mix just until combined.
Fill each cupcake liner about ⅔ full.
Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
Cool completely before frosting.

Easy Buttercream Frosting
Ingredients
½ cup softened butter
2 cups powdered sugar
1 teaspoon vanilla
2 tablespoons milk (more if needed)

Instructions
Beat the butter until creamy.
Add powdered sugar a little at a time.
Mix in vanilla and milk until smooth and fluffy.
Add food coloring or sprinkles if you'd like!
