🧁 Cream Cheese Muffins 2 Ways: Pumpkin and banana, both stuffed with a creamy center!

Ingredients
🎃 Pumpkin Cream Cheese Muffins
Cream Cheese Filling
4 ounces block style cream cheese, room temperature
3 tablespoons powdered sugar
½ teaspoon vanilla extract
Pumpkin Muffins
2 cups all-purpose flour
1 tablespoon pumpkin pie spice blend
2 teaspoons cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
15 ounces 100% pure pumpkin puree (Libby’s brand used)
½ cup canola oil
2 large eggs, room temperature
¾ cup light brown sugar, packed
¼ cup granulated sugar
2 teaspoons vanilla extract

🍌 Banana Cream Cheese Muffins
Cream Cheese Filling
6 ounces cream cheese, room temperature
¼ cup granulated sugar
2 tablespoons heavy cream
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
Banana Muffins
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
1 cup mashed bananas, approximately 2 large or 3 medium bananas
½ cup vegetable oil
1½ teaspoons vanilla extract
2 large eggs
¾ cup light brown sugar
¼ cup granulated sugar

Last week, we were really “Jumping into June” with our first full week with the school age students and Miss Maddox. We are fortunate to have a summer teaching intern here at Jumpstart and Beyond for several weeks. It’s a lot of work but also a lot of fun listening and learning all together. Here are some pictures of a few of our activities…

We have a little pet 🐢 and are in need of a small aquarium for him and accessories. He is a box turtle and has been named Tootsie.
