Empress Entremet ๐ฐ๐คฉ
What is an entremet?
An entremet is a multi-layered dessert, often a cake, that is assembled with contrasting textures and flavors, encased in a mousse, and finished with a glaze!
The Empress- Raspberry mousse, almond genoise, lime curd, mirror glaze, white chocolate plaques for decor.

Chocolates and Confections Class ๐ซ๐ฌ
This week students created hand-piped Amaretto Manon chocolates and dark chocolate dipped Nougatine Slivers with fleur de sel.
Nougatine is a blend of caramelized sugar, toasted almonds, and butter. Cut while hot and used as a base in this chocolate, shows both technical skill and precision.
