For last 12 years I have always blamed food first for my illness. I always try to remove, add or change foods the foods I am eating. I was trying that again this past week with an elimination diet. By the end of the week all of my symptoms were back and I had lost a few pounds.

So I am going to change directions.

Over the weekend, I have been eating what I want (still gluten free and low fodmap) when I want. I have not been adhering to a timed schedule or diet…and I feel much better.

I felt so good on vacation. I realize that I can’t get quite all of the benefits of vacation at home but I can try to take some aspects of it in my daily life.

So I am going to try to make some lifestyle changes starting this week and see if that helps.

My sushi making skills were a little off today 🤪 so only a few rolls were pretty enough to take a picture. I used a nori sheet, smoked salmon, carrot, cucumber and a bit of avocado. And of course served with wasabi and ginger!!! It was delicious 😋

Dinner was delicious!! Pan seared oven finished chicken thighs. Homemade sweet potato fries. Broccoli with Swiss chard, collard greens and carrots. Broccoli and sweet potatoes were in a low fodmap amount.

Lunch today was clearing out leftover proteins and veggies.

Plus I tried these today. They are a decent replacement for potato chips. Crunchy and salty but a bit less flavor. The texture is similar to a kettle chip which are my favorite.

For dinner I try to make the same meal for my family and myself sometimes. Some nights I have a completely different meal. Most nights are like our dinner today. We have some of the same things, but some different side dishes.

Tonight we all had pan seared pork medallions, sautéed zucchini and boiled carrots. They also had green beans and sautéed apples.

I had roasted sweet potatoes, turnips and parsnips, with sautéed Swiss chard and spinach topped with MCT oil.

On the menu for lunch today…

Crockpot chicken salad made with using this recipe from Scratch To Basics https://www.scratchtobasics.com/tangy-and-creamy-avocado-mayonnaise/
I left out the onion and garlic powder to make it

I added some turmeric and ginger to the chicken salad as well a little pineapple. I topped off the salad with some carrot, cucumber and broccoli slaw then wrapped it in collard greens.

Breakfast!

This is my breakfast most days-homemade sausage-usually turkey but sometimes pork or beef, with spinach, kale, carrots and roasted sweet potatoes (low fodmap at 75grams) with MCT oil drizzled overtop. The MCT provides a healthy fat to aid in absorption of vitamins, help digestion and gives me some extra calories as I still need to gain weight after my last flare.

I also have a bowl of fruit. I don’t always finish it for breakfast, sometimes I finish it at lunch. It gives me a great amount of fiber-about 12 grams. To keep it low fodmap, I use about 58 grams of raspberries, 65 grams of strawberries, and 2 kiwi-about 150 grams. Blueberries are low fodmap but I keep it to about a half a cup.

Meal prep day!!

I am already due to celiac and eat mostly as I have had difficulty adding back in high fodmap foods.

For my elimination diet, I am also taking out nuts, seeds, eggs, dairy, legumes, soy, gluten free grains and nightshades.

Sounds like it doesn’t leave much! But I still feel I have a lot of healthy fruits, vegetables and protein to choose from to eat daily.

Today I made roasted sweet potatoes, turnips, parsnips and rainbow carrots. I cooked a whole chicken in the crock pot. And I made pork sausage and turkey sausage for breakfast. I will also make kale chips and sautéed zucchini.

I will share my meals and the recipes each day.

Had an amazing week of sunshine, beach walks, bike rides, fresh fish, amazing nights of sleep and great family time.

Now it is back to reality…and time to start my newest round of food elimination diet to see if that can help me to feel better.

Although after last week of eating fresh fish and veggies every meal and still enjoying some treats and a bit of alcohol, I am thinking it is more lack of sleep and sunshine causing problems than food!!

Here’s hoping for a sunshine filled spring and some good nights sleep!
