Enjoy Traditional Corn Soup created by Laura Manthe at the STEAM Engine! Join us December 10th at the Tarlton Theater for a riveting multifaceted event that will include live music, delicious food and a dynamic conversation focusing on Sustainable Infrastructure and Futuring.
Ohe.Laku “Among the Cornstalks” is a group of Oneida families who grow heirloom Tuscarora white corn on the Oneida nation in Wisconsin. We grow this variety of our corn because of it’s versatility to be formed into a variety of food options.
Our corn soup is made with raw corn that is nitamalized with hardwood Ashes to remove the hard outer shell and make the corn digestible Wild releasing the niacin for your body to absorb. The cooked corn is added to smoked pork hocks or smoked turkey legs and soaked dried pinto and kidney beans that have simmered overnight. The dish is popular all over the upper part of Indian country but the white corn is hard to find. Some cooks resort to using canned hominy. You will be able to taste the difference!
