Andy Salazar is one of our MSDI students preparing for internship. He has experience working with the Boys and Girls Club of Weld county, and he especially enjoyed leading food related activities with the children.
Andy initially enrolled at UNC as a nursing student, but after taking a nutrition course, he discovered a passion for Dietetics and decided to change his academic path. With a longstanding interest in STEM and the medical field, he found Dietetics to be the perfect combination of biochemistry, healthcare, and evidence-based practice. He is passionate about helping individuals make informed decisions throughout their health journeys. Outside of work and academics, Andy enjoys creating meals and experimenting in the kitchen.

Our next intern highlight is May Nuhn!
May is currently pursuing her Master of Science in Dietetics (MSDI) at the University of Northern Colorado and lives in Loveland, Colorado. She grew up in Santa Maria, California, and her journey from the Central Coast to Northern Colorado has shaped both her personal and professional path.
She brings a strong work ethic and real-world experience to her training. Balancing work, school, and personal responsibilities has strengthened her time management skills and resilience, which she carries into her graduate studies and rotations.
May is especially passionate about helping others through nutrition, with a long-term goal of making a meaningful impact in people’s lives. She is particularly excited to gain hands-on experience in clinical settings, where she can apply medical nutrition therapy concepts and build confidence in supporting patients with complex health needs.
May is highly motivated, eager to learn, and not afraid to step outside of her comfort zone. She values feedback, actively seeks opportunities to grow, and is committed to becoming a compassionate and knowledgeable dietitian.
