Soup Season is officially here! And weโre here for it. ๐ฏ
Great way to sneak in a ton of minerals and vitamins without pi***ng off your kids. โบ๏ธ
Give the Gnocchi Soup a try!
We have zero leftovers. ๐
Recipe by:
Ingredients:
- 2 TBSP Olive Oil
- 1 Yellow Onion, chopped
- 1 cup Carrots ๐ฅ, peeled & sliced
- 1 cup Celery, sliced
- 6 Garlic Cloves, chopped
- 2 tsp Thyme
- 1 tsp Oregano ๐ฟ
- 1 tsp Sage
- 4 cups Vegetable Broth
- 1 can (13.5 oz) Coconut Milk
- 1 can (15 oz) can Chickpeas, drained
- 1 16 oz package Potato Gnocchi
- 1 cup shredded Vegan Parmesan Cheese, optional (we use Italian Blend)
- 2 cups Kale ๐ฅฌ, chopped
- 1 tsp Apple Cider Vinegar
- Sea Salt & Cracked Black Pepper, to taste
- Parsley, garnish (optional)
Directions:
1. In Large pot, heat oil in a medium heat.
2. Add onion, carrot, celery, and pinches of salt and pepper. Cook, stirring occasionally for 8 minutes.
3. Add garlic, thyme, oregano, and sage and cook for another minute, stirring frequently. Add chickpeas and gnocchi.
4. Add veggie broth and coconut milk along with pinches of salt and pepper. Stir to combine and bring to a simmer over medium high heat.
5. Once simmering, add Kale. Reduce heat to medium low and simmer for 6-10 minutes or until kale is soften.
6. Remove from heat and stir in shredded vegan cheese until melted. Add apple cider vinegar.
7. Garnish with parsley and red pepper flakes.

Chick-Fil-A Style Nuggets โ-
All the flavors you love, minus the ๐ Bird.
Recipe By:
Ingredients:
- 1 Block Super Firm Tofu
- 1/2 tsp Soy Sauce
- 1/2 cup Pickle Juice
- 2 TBSP Agave Syrup
- 1 TBSP Poultry Seasoning
- 1 tsp Smoked Paprika
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 3/4 cup Nutritional Yeast
Vegan Honey Mustard Dipping Sauce
- 1/2 cup Vegan Mayo
- 2ยฝ TBSP Yellow Mustard
- 2ยฝ TBSP Agave Syrup
- 2 TBSP BBQ Sauce
Directions:
1. Preheat oven 400F. Line baking sheet with parchment paper.
2. Mix all ingredients in medium bowl (except tofu). Squeeze excess water ๐ฆ from tofu and tear into โbite sizedโ pieces.
3. Fold tofu into mixture, coating evenly. Lay on baking sheet, removing excess mixture. Cook for 35 mins, turning halfway through.
4. While tofu is baking make the sauce. Boom ๐ฅ

Sushi Bowls!
If you donโt like tofu, weโre telling you, youโre doing it wrong or someone else is doing it wrong.
Either way, you need to figure your tofu game out ๐ฏ
This plant ๐ฑ protein is packed with goodness and takes on any flavor - texture youโre looking for.
Bake Tofu:
1. Preheat oven to 375 F. Line a baking sheet with parchment paper.
2. Using Super Firm Tofu, squeeze out excess water ๐ฆ. Next marinate for 5 mins (while oven is preheating). We use soy sauce, nutritional yeast, salt n pepper, and sesame seed oil.
3. Bake for 20 minutes, turning half way.
Boom! You got some goodness for your sushi bowls. ๐ฏ

These Maple Breakfast Jack Sausages by jack & annie's weโre off the chain!
Seriously, theyโll blow your mind. Breakfast favorites minus the carcinogens and dead ๐ ๐
Pair with our tofu scramble recipe and throw everything on a bagel! ๐ฅ
Tofu Scramble:
- 1 Block Extra Firm Tofu
- 1/4 tsp Turmeric
- 1-3 TBSP Cashew Cream (1 cup Raw Cashews + 1 cup Water ๐ฆ + pinch of Sea Salt, Blended)
- 1 tsp Nutritional Yeast
- 1/4 tsp Sea Salt
- 1/4 tsp Smoked Paprika
- 1/4 tsp Garlic Powder
- 1/4 tsp Onion Powder
- Fresh Cracked Black Pepper, to taste.

Dessert is our kids favorite meal of the day โ yours too?! ๐ฏโบ๏ธ
This was simply delicious โ SAVE FOR LATER.
Dough: You can certainly make your own. Our go-to hack is pre-made dough from Trader Joe's.
Cinnamon Streusel:
- 1 cup All Purpose Flour
- 1/4 cup Sugar (we use Zulka Sugar - Bone Char Free)
- 1/3 cup Brown Sugar
- 1 tsp Cinnamon
- 1/4 Cup Vegan ๐ฑ Butter
Icing:
- 1 cup Powdered Sugar
- 1 TBSP Non Dairy Milk
- 1/2 tsp Vanilla Extract
Directions:
1. Preheat oven to 375 F. Lightly grease pan and form pizza dough.
2. For Cinnamon Streusel crumb mixture: Add all ingredients in a small bowl and mix together till crumbly. Hands ๐๐ฝ work great! Sprinkle crumbs evenly over the crust.
3. Bake for 15-20 minutes or till crust is light brown.
4. Icing: Whisk together ingredients and drizzle over the pizza. ๐ฅ
And who said going Vegan ๐ฑ was hard?

Sticky Cauliflower Nugs! ๐ฏ
Crazy that something this healthy can taste so dang good!
Ingredients:
For the Batter:
- 1 Cauliflower Head, cut into florets
- 1 cup Chickpea Flour (All Purpose works too!)
- 1 cup Unsweetened Plant Based Milk (we used Cashew)
- 1 tsp Sea Salt
- 1/2 tsp Garlic Powder
- 1/2 tsp Ginger Powder
- 1/2 tsp Baking Powder
For the Sauce:
- 2 Garlic Cloves, minced
- 1 tsp Fresh Ginger, minced
- 1/2 cup Water
- 2 TBSP Soy Sauce
- 2 TBSP Maple Syrup (or sweetener of choice)
- 1 TBSP Rice Vinegar
- 2 TBSP Tomato ๐
Paste
- 2 TBSP Cornstarch
Optional:
- Green Onions, topping
- Everything Bagel Seasoning, topping
Directions:
1. Preheat oven to 400 F. Line a baking sheet with parchment paper.
2. Mix all batter ingredients, adding cauliflower last. Make sure florets are evenly coated and transfer to baking sheet. Bake 25 minutes, turning halfway through.
3. While cauliflower is baking, make the sauce. Add all ingredients for sauce (except garlic and ginger) in a medium sized bowl. Mix.
4. In a large pan over medium heat add a drizzle of oil (we used sesame). Add garlic and ginger. Cook for 90 seconds. Add sauce and bring to a bubble. Reduce heat and continue to whisk until sauce thickens (this will happen quickly).
5. Once cauliflower is done, add to the sauce. Coat evenly. Serve on a bed of rice. Top with green onions and everything bagel seasoning. ๐ฅ

Who needs a bowl of pic me up?
We got you! ๐ค Say hello to Italian Orzo Soup!
Ingredients:
- 1 yellow Onion, diced
- 1 cup Celery, diced
- 1 cup Carrots, peeled and diced
- 1 Bell Pepper (any color), seeded and diced
- 2 Garlic Cloves, minced
- 1/2 TBSP Oregano ๐ฟ
- 1 14.5 ounce can Diced Tomatoes
- 6 cups Veggie Broth
- 1 cup Orzo Pasta
- 1 15.5 ounce can Great Northern Beans, drained and rinsed
- 1/2 Lemon ๐, juiced
- 3+ TBSP Parsley, chopped
- Sea Salt and Pepper, to taste
Optional: Red Pepper Flakes, Cashew Cheese*, More Parsley for topping
*Cashew Cheese: 1 cup Raw Cashews, 1 cup Water, Sea Salt blended in High Speed Mixer for 1 Min.
Directions:
1. In a large soup pot over medium heat drizzle olive oil. Add onions, celery, carrots, and bell pepper. Cook for 10 minutes, stirring occasionally.
2. Add garlic and oregano. Cook for 1 minute.
Add diced tomatoes, broth, orzo, great northern beans and bring to a boil, stirring occasionally.
3. Once boiling, reduce heat to low and simmer for 15 minutes, or until the orzo is the way you want. Add lemon juice and parsley. Season with salt and pepper to taste.
4. Add your favorite toppings! Boom!! ๐ฅ Get your soup on!
