Honey Hill Apiary Honey Hill Apiaries is nestled in a ridge on a historic 18th century property producing raw honey and other bee related products. It is a totally pure product.

BACKGROUND
Honey Hill Apiaries resides in the Hudson Valley Region of New York State in the Township of Goshen. It is owned and operated by Jon Leonard; a lifelong beekeeper. The honeybees we raise produce the finest regional honey from the wildflowers, fields, and trees in the area. The honey is fresh, utmost organic, and unprocessed (raw) - which allows one to experience all of the wonderful benefits of this delicious product of nature!!! THE BEES
Our bees are from pure Italian stock. All 7 hives in our small apiary were made from splits from the original breeding stock we purchased several years ago from a breeder in South Carolina. By splitting our own hives through the last several years it has allowed natural selection to help us breed for cold hardy bees to survive the New York State winters. THE HONEY
Our honey is a wildflower honey. However, it is primarily alfalfa honey as our hives are located by several alfalfa fields owned and operated by a local dairy farmer. Our honey is raw meaning it is totally unprocessed. The honey, once extracted from it's comb - is passed through a fine screen to remove any loose wax, etc - that is it!! We only harvest one time per year - usually late summer - to capture all of the fine subtle flavors that are created by the various types of pollen our bees gather. We offer 2 size jars: (8 ounce and 1 lb) for our friends to enjoy one of nature's most delicious treats!!! Raw honey is honey that has not been heated. The nutritional and beneficial live enzymes in the honey are affected by heat. The more you heat the honey the less nutrition and enzymes. Raw honey will crystallize faster and give a more solid appearance. You can put the jar into hot water to liquefy but you will loose some nutrition and enzymes.

The head of the household to go out to the hives, knock gently to get the attention of the bees, and then softly murmur of the solemn news. Also wrapped the top of the hive with a piece of black fabric or crepe.

Royal beekeeper, John Chapple, has informed the hives kept in the grounds of Buckingham Palace and Clarence House of the Queen's death. The bees were also told King Charles is now their boss.
