Cover the middle first! This one's actually a preview for our Triples Tennis league, launching this October β but it applies on any court. In a doubles or triples format, most points are won or lost down the center of the court, not the alleys, since the middle is the shortest path to either side. File this one away for when Triples kicks off this fall!
π₯ Recipe of the Week: Sweet Potato and Chickpea Buddha Bowl
A vibrant, plant-powered bowl loaded with roasted veggies, quinoa, and a creamy tahini drizzle β easy to prep ahead for a busy week of classes. π
π Prep: 15 min Β· Cook: 25 min Β· Serves 4 (about 2 cups each)
π Ingredients: β’ 2 medium sweet potatoes, peeled and cubed β’ 1 can (15 oz) chickpeas, drained, rinsed, and patted dry β’ 2 tbsp olive oil, divided β’ 1 tsp ground cumin β’ 1 tsp smoked paprika β’ 1/2 tsp garlic powder β’ Salt and pepper, to taste β’ 1 cup quinoa, uncooked β’ 4 cups baby spinach β’ 1/2 red onion, thinly sliced β’ 1/4 cup tahini β’ 2 tbsp lemon juice β’ 1 tbsp maple syrup β’ 2β3 tbsp water, to thin
π©βπ³ How to make it: 1οΈβ£ Preheat oven to 425Β°F and line a baking sheet with parchment. 2οΈβ£ Toss sweet potato cubes and chickpeas with 1 tbsp olive oil, cumin, smoked paprika, garlic powder, salt, and pepper. 3οΈβ£ Spread in a single layer and roast 22β25 minutes, flipping halfway, until sweet potatoes are tender and chickpeas are lightly crisp. 4οΈβ£ Meanwhile, cook quinoa according to package directions; set aside. 5οΈβ£ Whisk tahini, lemon juice, maple syrup, and water together until smooth and pourable; season with a pinch of salt. 6οΈβ£ Divide spinach, quinoa, roasted sweet potato, chickpeas, and red onion among 4 bowls. 7οΈβ£ Drizzle each bowl with tahini dressing and serve.
