Cornell Craft Beverage Institute - CCBI The CCBI exists to improve the quality and visibility of New York craft beverages. We ferment things! Enology.

The Cornell Enology Extension Lab exists to improve the quality and visibility of New York wines through workshops, applied research, and competitively-priced juice and wine analysis. Anna Katharine Mansfield is an Associate Professor of Enology, and supervises extension-related research, the EnoCert program, and B.E.V.-NY [Business. Viticulture.] Chris Gerling is an Enology Extension Associate, and oversees the New York State Wine Analytical Lab (NYSWAL) and the Vinification and Brewing Lab. Chris also coordinates B.E.V.-NY, Cider and Distillation courses, and other outreach activities. Pam Raes manages the NYSWAL, Luann Preston-Wilsey manages the V&B, and Cortni Stahl aids in extension programming and cider outreach.

If you think consumers are wary of red w**es with 'hybrid' color, think again! Former student Dr. Catherine Dadmun found that consumers think they'll like darker red w**es more than lighter red w**es, regardless of grape cultivar. It's just expected liking, though- actual liking isn't linked to color at all.
