Food Microbiology Fundamentals

The Institute for Food Safety at Cornell University in partnership with the Produce Safety Alliance is excited to announce the launch of our newest self-paced online course: Food Microbiology Fundamentals.

Microorganisms are abundant and everywhere in our environment and many of them play a key role in our food system. Some are beneficial and others can cause severe illness. This course gives a foundational understanding of roles that different microorganisms play in food safety and quality; microbial growth and life cycles; and testing, monitoring and prevention of foodborne pathogens. It is designed for a wide range of food industry professionals from farmers to food plant employees, food safety auditors and consultants to university education and extension personnel, and quality control personnel to inspectors from regulatory agencies.

Building on the momentum from day one, participants in the Advanced Trainer Workshop continued expanding their knowledge through hands-on activities and discussions focused on pre-harvest and postharvest water management during the second day of the workshop.

On the final day, participants explored sanitation practices, observed real-world applications and discussed key produce safety considerations. The workshop concluded with sessions focused on helping PSA Trainers develop engaging activities and educational approaches they can incorporate into future PSA Grower Training Courses.

This three-day workshop in Prosser, Washington, was developed to deepen understanding of the science behind the FSMA PSR and strengthen trainers’ ability to effectively educate growers and other stakeholders. The workshop is a collaborative effort between the Produce Safety Alliance, Washington State University, Texas A&M, Alabama A&M, and the University of Florida.

Aprovechando el impulso del primer día, los participantes del Taller Avanzado para Instructores continuaron ampliando sus conocimientos a través de prácticas y debates centrados en el manejo del agua de precosecha y postcosecha, a lo largo de la segunda jornada del taller.

En el último día, los participantes exploraron prácticas de saneamiento, observaron aplicaciones en situaciones reales y debatieron consideraciones clave sobre la inocuidad de los productos agrícolas frescos. El taller concluyó con sesiones orientadas a ayudar a los instructores de la Alianza PSA a desarrollar actividades atractivas y enfoques educativos que puedan incorporar en futuros cursos de Capacitación para productores de la Alianza PSA.

Este taller de tres días, celebrado en Prosser, Washington, fue diseñado para profundizar la comprensión de la ciencia que sustenta la Norma de inocuidad de los productos agrícolas frescos de la Ley de Modernización de la Inocuidad de los Alimentos (FSMA), así como para fortalecer la capacidad de los instructores para educar eficazmente a los productores y otros interesados. Yesterday, 27 PSA Trainers completed their first day of the Advanced Trainer Workshop, hosted in Prosser, Washington. This three-day workshop was developed to further the understanding of the science behind the FSMA PSR, enabling PSA Trainers to more effectively educate participants in the PSA Grower Training Course.

The workshop is a collaborative effort between the Produce Safety Alliance and Washington State University, Texas A&M, Alabama A&M and the University of Florida.

On the first day, the participants engaged in activities focused on soil amendments and animal intrusion, and attended presentations on food microbiology, soil amendments, and pre-harvest water.

Ayer, 27 instructores de la Alianza PSA completaron su primer día del Taller Avanzado para Instructores, organizado en Prosser, Washington. Este taller de tres días fue desarrollado para profundizar la comprensión de la ciencia detrás de la Norma, de modo que los instructores de la Alianza PSA puedan educar de manera más efectiva a los participantes del curso de Capacitación para productores de la Alianza PSA.

Conference Session Spotlight: Agricultural Water Assessment - Getting Value Out of the Effort.

Conducting an Agricultural Water Assessment for Pre-Harvest Agricultural Water is required by the FSMA PSR. Most farms will be able to navigate performing the assessment and keeping the required records, but the goal is to actually get value from the process. This includes not only minimizing microbial risks but also gaining a better understanding of farm management and achieving other goals. This presentation will summarize the Pre-Harvest Agricultural Water Requirements, provide insights into which parts are best supported by science, engage the audience to gather feedback about challenges in assessing risks, and provide ideas for how to gather value from the process.
