What happens after your meal?

Sustainability at CAS goes beyond what happens in the dining hall.

Throughout Higher Education Sustainability Month, we're highlighting some of the partnerships and practices that help CAS reduce waste, support local sourcing, and contribute to a more sustainable campus.

That includes composting food waste with Natural Upcycling, recycling used cooking oil through Restaurant Technologies, recycling bottles and cans through our partnership with Arc GLOW, and working with local and New York State vendors to bring products to campus.

uKnighted by Flavor: Taste the Culture, Discover Community

Join us Thursday, October 15, from 5–7 p.m. at Red Jacket Dining Hall for an evening celebrating culture, connection, and community through food.

Taste dishes inspired by campus cultural dinners, discover student cultural organizations, and experience the many cultures that make our Geneseo community unique.

The evening will also feature performances, raffles and prizes, giveaways, origami, and temporary henna tattoos.

Gather with friends, try something new, and celebrate the cultures and traditions that bring our campus community together.

You've seen Origins around Red Jacket. But have you tried it?

Origins brings Asian-inspired flavors to customizable bowls, with ingredients and sauces prepared daily using a variety of seasonings and preparation methods.

This week, the Gyuden Bowl features beef or Impossible beef sautéed and simmered with onions in a sweet and savory broth, served over rice with your choice of toppings like shichimi togarashi, scallion, and pickled ginger.

Origins also offers Gluten-Friendly, Vegetarian, and Dairy-Friendly options.
