Bidens alba, also known as Spanish needle, is going to seed. At this stage in the growing cycle, there are many great food options. The blooms are suitable for salads, other dishes, and fermentations. Collecting wild yeast for fermented drinks, vinegar and baking. Unopened blooms as capers, and seeds for flour. It's harvest time for the next two weeks. I'm giving morning classes by appointment for individuals and small groups. If interested, please message me.

Foraging for these wild edibles in central and north Florida is best done during this time of year. When harvesting and processing, it's crucial to use sources free of sprays and pollution. Would you like to join us for a morning of harvesting and conversation?

Stachys Floridana aka Florida Betony.
is a species of betony in the mint family, Lamiaceae. It is native to Florida.
The leaves make a healthy tea. The roots are edible and can be eaten fresh or cooked or pickled/fermented.
They need no care.
A great wild plant to have in my food forest.
I harvest from April through July.

Zero waste kitchen and things we harvest:
Lemon juice is great 😊 but what do we do with all the peels? We can use them in more than one way. My favorite is fermenting them.
Here I’ve chopped them up with fresh turmeric, ginger, cranberry hibiscus, ACV and topped with Honey. You can add chili flakes to it if you like it hot. It can stay out in the kitchen till you open it., then into the fridge.
