Cheesy enchiladas...what's not to love?

Today for high school lunch we're serving pepper jack enchiladas, elote corn, enchilada toppings, and a fresh assortment of fruits and veggies.

Fun Fact: The word enchilada comes from the Spanish word enchilar, which mean "to season with chili". The roots of enchiladas go back to the Mayan and Aztec Empires, where people rolled different foods inside corn tortillas.
