Loaded Mashed Potato Cakes
Ingredients:
2 cups cold mashed potatoes
1 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/4 cup chopped green onions
1 egg, lightly beaten
1/4 cup flour
1/2 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons vegetable oil
Directions:
In a large bowl, combine mashed potatoes, cheddar cheese, bacon, green onions, egg, flour, garlic powder, salt, and pepper. Mix until well combined.
Form the mixture into small patties, about 2 inches in diameter.
Heat vegetable oil in a large skillet over medium-high heat.
Add the potato cakes to the skillet, working in batches if necessary.
Cook for 3-4 minutes on each side, or until golden brown and crispy.
Remove from skillet and drain on paper towels.
