Veronica Guerrero-Pesina, EFNEP Educator helps children in her Kids in the Kitchen class at the Bentonville Public Library make Food Group Funny Faces. The children learned about grain foods and the difference between refined grains and whole grains during their class.

Participants at Rogers Public Library Teen Cuisine class made Skillet Lasagna during class. Even lasagna can be made healthy by adding baby spinach and decreasing the amount of cheese. These teens learned about the difference between whole grains and refined grains and the importance of eating a variety of vegetables and fruits.

Cyclosporiasis is an intestinal illness caused by the microscopic parasite Cyclospora cayetanensis, also known as Cyclospora. Cases have been particularly high this summer with over 1600 confirmed cases nationwide and 26 cases in Arkansas. Most of the cases have been traced to shredded lettuce served at Taco Bell locations in Indiana, Kentucky, Michigan, Ohio and West Virginia.
People can become infected by consuming food or water that contains the parasite. Cyclosporiasis is not usually life-threatening, but gastronomical distress can be severe. Use these common sense tips to help prevent Cyclosporiasis.

We are excited to welcome Camelia Eheart to the EFNEP team! Camelia is based in our Fayetteville office and will be teaching EFNEP classes in Washington and Benton Counties. Newly graduated high school seniors are learning how to choose healthy foods and prepare their own meals at our EFNEP class in the Springdale Public Library. Cooking skills help young adults maintain a healthy lifestyle as they leave home and start college or jobs.
