In full transparency, I think he has chocolate milk running through his veins instead of blood sometimes!

24-28lbs of fresh curds + 16ish pounds of water in the 2 gallon bucket.
This is why it’s important to flip the cheese several times while it’s pressing. The top of the cheese only has the water weight on it.

•Puts her all into milking—doing close to 6 gallons a day in her first lactation with our summer heat!!
•Super sweet personality!
•Calved easily and had no troubles.
•Jupiter is on the smaller side of Swiss, and I absolutely love how productive she is! She milks fast and clean and has a super soft udder. It wouldn’t take much effort to convince me to keep her!

Curds, whey, molds, salt…
So many times I go back to loving cheesemaking.

Go ahead, master the big three cheeses of America—Cheddar, Mozzarella, and Parmesan, in one or two milking seasons. Feed your family. But sometime, just savor the cheese and see the artistry.

90% of the time it’s just a slice of cheese on a sandwich or topping on tacos.
The other 10%, cheese is savored, almost revered, and sends me back to books and recipes trying to improve and perfect…and then I realize, it’s the imperfections that makes it a masterpiece.

Trying to catch the essence of some cheese made on a foreign shore centuries ago. It’s like connecting with history, and being able to taste it.
Taste the high Alps, the Spanish moors, a French monastery, and English caves.

We add our own local terroir with its subtle influences. Spring water, trees and innumerable shrubbery, crazy summer flowers and herbs—it all comes together in one cheese, and it captures me in ways I can’t explain.

Neptunes Farm and Dairy produces raw Cow, Sheep, and Goat milk. We also make and sell raw milk cheese.
Our livestock graze year round and are supplemented as needed with seasonal local hay and grain.
