In Provence in the South of France, it’s tradition to harvest thyme while flowering, making the dried herb even more fragrant.

In addition to cooking, thyme has wonderful medicinal qualities. As an herbal tea, it helps against coughs, and works like an expectorant. It has anti-bacterial, anti-septic, and anti-viral properties too.

Once cut, rinse in cool water and roll up in a dish towel to dry. Place on a parchment-lined baking sheet and bake at 100 degrees F. for 24 hours. Once dry, gently strip the herb from the stem. Discard the stems or save to add to homemade broth.

This way you can enjoy this aromatic herb all year round.

What’s in season in Arkansas? Magnificent fresh shelling beans … heirloom varieties from farmer Larry Lowman of Ridgecrest Gardens, Purple Hulled Whipporwill pea, the fantastic pink speckled Coco Robico bean and Larry’s own Faerie Magic Pink Lima.
These shelling beans were intended for our soupe au pistou and instead stole the limelight in our cooking class. Farmer Larry felt they were too special to get buried in soup, so cooked them up separately for a delicate tasting alongside the soup and plant-based stuffed peppers stuffed with whole brown rice and shiitakes. miam!

Dandelion Medicine 🌼
Dandelion root is a traditional tonic for the liver and the blood, and has a rich tradition of tonic use to relieve conditions such as acne, psoriasis, and eczema.
It’s also used to support the body in fasting and cleansing, and can be combined with a number of herbs as a tea for detoxifying the liver and skin. Fine candidates for formulation with dandelion include red clover blooms (Trifolium pratense), cleavers (Galium aparine), stinging nettles (Urtica dioica), burdock root (Arctium lappa and A. minus), violet (Viola sororia and V. odorata), chickweed (Stellaria media), and yellow dock root (Rumex crispus and R. obtusifolius).
Dandelion is a digestive remedy par excellence. It’s best taken solo or in combination with other bitter herbs twenty minutes before eating to prime the digestive system and increase bile excretion. This is an age-old tradition that we'd do well to keep alive, especially considering many of us lack bitter foods in our diets.
