This southern recipe for truck driver gravy calls for self-rising flour. This is most likely because most southern homecooks had self-rising flour on hand for biscuits and self-rising flour already contains salt. As you can see the recipe only calls for pepper. That said, you can use all-purpose and season it to taste.

I also included a basic brown gravy recipe in the comments 😋
