So saddened to hear the shocking news that today (8/10) Chef Nicholas Lodge who was a leader in the cake industry nationally and internationally, passed away suddenly today from a brain aneurysm. Not only was he a fantastic teacher and very meticulous with his crafts, he was also gracious, kind and generous with his wealth of knowledge. My condolences to his families and friends.. Making a statement.
Gum-paste flower power.
When I owned a bakery, this cake traveled from Lancaster Pa to Boston Ma... Thank goodness for dry ice and great cake engineering! It traveled in a 4 and 3 tiers and final assembly at venue.
Mannequin dressed in all edible clothing and accessories ready for Mardi Gras (including buttercream tattoo). Fondant bodice, hat and shoes. Sugar lace netting, skirt, cummerband, necklace and earrings. Gum paste flowers. Edible dragee beads.
This was such a fun project to do!

50/50 fondant/gum paste bridal gown train. Piping is done using silver piping gel and tiny sugar crystals with iridescent Twinkle Sprinkle cake glitter. You can match a bridal gown pattern with all the bling if you have the right products.

... thinly rolled fondant is the answer.
Edible gum paste flowers are awesome keepsakes. I use jellybeans on which to build my rose petals. Heat the wire and push it into the jellybean, no more roses coming off the wires. Just heat the straight end of the wire and push it in. I use denatured alcohol (it burns cleanly without a black residue) and a little alcohol burner.
