Ranch is the most popular salad dressing in the U.S.—but many store-bought versions are filled with additives, preservatives, and dairy. Holistic Chef Instructor Michele Tedrick created this fresh, herb-packed version inspired by the idea that simple ingredients often taste best. 🌿🥣

This dairy-free ranch has become a favorite at gatherings and always disappears fast!

✨ The Best Mayonnaise-Based Dairy-Free Ranch Dressing

INGREDIENTS:
• 1½ cups mayo (olive oil or avocado oil based)
• 1/8–1/4 cup almond milk
• ½ tsp Dijon mustard
• 1 garlic clove, minced
• 1/8 cup fresh dill, chopped
• 1/8 cup parsley, chopped
• 1/8 cup chives, chopped (optional)
• 1 tbsp lemon juice
• ½ tsp salt
• ¼ tsp cracked black pepper

TO MAKE:
Mix everything in a bowl or jar. Adjust seasoning and consistency as desired. Refrigerate before serving for the best flavor.

Fresh dill, parsley, garlic, lemon juice, and Dijon create that classic ranch flavor—without the dairy. Perfect for salads, veggie platters, wraps, bowls, or as a dip. 🥕✨

🌟 Student Spotlight: Fahima Zarbafiyan 🌟

We're proud to celebrate Bauman College Nutrition Consultant student Fahima Zarbafiyan, who has earned a competitive national scholarship to attend HEALCon 2026, the annual conference of the National Association of Nutrition Professionals (NANP).

Fahima came to Bauman looking for more than nutrition trends and quick fixes.

💬 "I wanted a deep, science-based understanding of nutrition that still respected the whole person: body, mind, and lifestyle."

Through our Holistic Nutrition Consultant program, she discovered how nutrition connects with stress, sleep, hormones, digestion, and emotional wellbeing while building the skills to support future clients with confidence and compassion.

Attending HEALCon was a pivotal moment in her journey.

💬 "Being surrounded by experienced professionals and hearing about functional lab testing, hormones, trauma, gut-brain health, and more made me feel excited and proud to be entering this field."

🌾 Whole grains vs. refined grains — what’s the difference?

Cereal grains like corn, wheat, barley, rye, rice, and oats provide more food energy to humans than any other crop on earth. In their whole form, they are deeply nourishing and packed with fiber, protein, vitamins, and minerals. 💪

But when grains are refined, the bran and germ layers are removed to improve texture and shelf life. This process strips away a significant amount of nutrients, including:
❌ Fiber
❌ Protein
❌ Vitamins + minerals

Examples of refined grains include:
▫️ White rice
▫️ White flour
▫️ Degermed cornmeal
▫️ Cornstarch

While many refined grains are later “enriched” with synthetic nutrients, they still do not offer the same benefits as whole grains in their natural state.

🌱 Whole grains help support steadier energy and balanced blood sugar, especially when paired with healthy fats and fiber-rich foods.

Sometimes the best recipes are the ones you don’t need to memorize. ✨🍋

Holistic Chef Instructor Michele Tedrick loves this simple “no-recipe” vinaigrette because it comes together in about a minute using pantry staples—and once you learn the ratio, you can make it anytime without measuring.

✨ One-Minute Lemon Vinaigrette in a Jar

THE RATIO:
• 1 part lemon juice
• 1/3 part Dijon mustard
• 2 parts extra virgin olive oil
• Salt + pepper to taste

EXAMPLE:
• 1 tbsp lemon juice
• 1 tsp Dijon mustard
• 2 tbsp olive oil
• Salt + pepper

TO MAKE:
Add everything to a jar with a lid and shake until combined. That’s it! 🫙✨

This bright, versatile vinaigrette pairs beautifully with delicate greens, grain bowls, roasted vegetables, or simple everyday salads.

Tip: No lemons? Apple cider vinegar makes a great substitute.

Learning to cook with ratios instead of rigid recipes is a foundational culinary skill taught throughout the Holistic Chef Program, including courses like Foundational Ingredients and Pastry Arts & Alternative Baking.

Lauren Bryson, NC, BCHN® a 2020 Bauman College graduate, Board Certified in Holistic Nutrition through NANP, and founder of Lauren Emerson Wellness,, a functional nutrition practice specializing in gut health. Lauren blends holistic health coaching with functional lab testing to support clients in reaching their health goals through a personalized, root-cause approach.

In addition to her private practice, Lauren is the host of Go Play in the Dirt, a podcast exploring the connection between biodiversity, soil health, the gut, and overall health. She also serves as the full-time Diggin’ Education Manager at the Agricultural Institute of Marin, where she leads farmers market tours, farm tours, and classroom visits that connect students with local food systems, seasonal produce, and the farmers who help nourish our communities.
