And I did this today. Sauerkraut!
5 # shredded cabbage
3 Tbsp salt
Squish together.
6 cups 3% brine
1/4 tsp coriander and garlic powder.

Will let you know.

My first brine ferment. Broccoli, carrots and cauliflower. 3-4 TBSP Himalayan salt, 2 quarts water, garlic and onion powder.
