Got some fresh, locally grown figs at Mountain Home Farmers Market this morning 😋 Whiteville Acres, we'd never gotten to try a fresh fig before & these are DELICIOUS!!!! So awesome we've got such wonderful things available locally.

I'm re-running this post because I see a lot of canners are concerned about lids like these and are throwing out their home canned foods unnecessarily. Don't be afraid when you open up your jar of home-canned food and you see a lid that looks like this (or worse!). This is NOT a sign of food spoilage.

It's called pitting or pinholing. It happens when the enamel on the lid has tiny imperfections and the natural compounds in food react with it. Pitting is harmless and the food in the jar is still safe to eat.

Remember, if you use a modern (2016 or newer) tested safe canning recipe from Ball, Bernardin, or The National Center for Home Food Preservation website, AND the lid on the jar remains intact, your food won't go bad in the pantry.
