Just wondering how everyone is doing?
It has been great unplugging.

Today is the coldest day of the week (-13F) but sometimes we still want to play. And so we choose the warmest hour of the day to play.
But we all know that dressing appropriately is a must.
To really do it right, you need these 3 layers:
1. Base Layer (long socks or tights)
2. Second Layer (pants, sweater)
3. Outer Layer (coat, hat, mittens and waterproof snow pants)
* If snow pants are well insulated, you can skip the pants
* As the temperature drops below 40 degrees, the second and outer layers should get thicker and more substantial to keep kids warm.

1. Base layer ( heattech) or plus regular long sleeves shirt + wool socks
2. 2nd layer: Fleece Jacket without hood
3. Last Layer: /NorthFace hooded winter Jacket, Head winter gloves from Costco and winter boots from boots
We find it really hard to use our hands to play outside though and sometimes winter gloves fall off from my kids’ little hands. Any tips please? ⬇️

Kids behave well when they can. And when they don’t, they do not intentionally do it. Always, always there is something underneath that need some loving and helping.

My secret when Im sad is to look at nature. There is so much that we get from just looking at nature. We can stay still while appreciating what is in front of me as it is-without judging. It gives rest and relaxation and just being with nature blossom gratitude. We can teach children how to be grateful just by looking how complex and beautiful nature is.
Sometimes, they way out of sadness is just through our door. Open it and step out.

My word for 2022 is FOUNDATIONS.
It will be the year for building foundations-inner work, spiritual foundations that will hopefully help me to ‘fly’ again:) ; Taking it slow and giving myself some grace.
Motherhood shook my world 5 years ago and this will be the year that I’m going to swim above the water (iA) after treading for a few difficult but beautiful years.
Alhamdullilah.
I expect and hope for more growth pains and many lessons and wisdom along the way.

One snowy rough and tumble play!❄️🎿
It was way too cold for me to stay long in the snow but’ these kids’ seems to be not bothered by cold. 😀

We had fun doing the easiest DIY ice cream. We only used 2-3 ingredients for these.
Since Ube (purple yam) Ice cream is a classic in my country, I decided to introduce it to my kids who have never been there yet. And of course we have left over oreo cookies so we decided to use that as well.
RECIPE:
Ube Ice Cream
1 cup heavy whipping cream
1/2 cup Ube flavored condensed milk (usually found in asian stores)
COOKIES & CREAM
1 Cup heavy whipping cream
1/2 can condensed milk
Oreo cookies (crushed)- great for kids’ fine motor skills!
STEPS:
1. Whip the heavy cream until soft peaks form
2. Add condensed milk to incorporate and whip it a little bit more.
2. Fold your toppings!
3. Transfer to container and freeze for 4-6 hrs

As everyone is preparing for thanksgiving, I’m reminiscing a special icecream from home. Ube ice cream or purple yam ice cream!
I didn’t want to go through boiling the milk and waiting for the base to cool off. Cutting off steps is always a plus when working with 3 little impulsive kiddos 🥳
So we opted to do 2/3 ingredient ice cream.
UBE/ PURPLE YAM ICECREAM
Heavy Cream (1 cup)
Ube condensed Milk (1/2 can)
COOKIES and CREAM
Heavy whipping cream (1 cup)
Condensed Milk (1/2 can)
Oreo cookies chunks (add as much as you wish)
STEPS:
1. Whip the heavy cream until soft peaks form
2. Add condensed milk
3. Whip a little bit more to incorporate
4. Add your chunks or sprinkle as you wish
First 3 are actually to make the icecream base. After which you can add any toppings as you wish.
