That’s a wrap on everyone’s favorite semester so far 🇮🇹🫒👩🏻‍🍳🌱🍷✈️🌏🐮🏡

We hope you have enjoyed seeing bits and pieces of our amazing 3 months in Ascoli Piceno!! This charming little town quickly became our home and we became a family sharing meals, stories, and long travel days together!! Having this unique semester abroad allowed us to truly experience the Italian culture and feel like locals. We owe it to our amazing professors who always supported us and taught us unforgettable lessons about the Italian culture, culinary arts, sustainability and nutrition 🤓📚🍎🐛

Ciao! Each week as a part of our NUTR 625 course we go on a field trip where we get to see how different food products are made. Last week, we were able to take a tour of the Sabelli Cheese Factory which is located just 20 minutes away from where we are living! Here, we met the owner of the factory and had the chance to talk to him and ask him questions! After, we took a tour of the cheese factory and got to see how different cheeses are produced. We even got to sample the cheeses while we were in there! We finished our tour by trying some of the other products they offered at their onsite shop!!🧀🧀

CIAO ECOG FOLLOWERS!!

Here are some bits and pieces from our last couple of cooking classes with Roberta and Diana! The last couple of weeks we haven’t been traveling for our friend trips; instead we have met in the kitchen to make both national and local delicacies🇮🇹🍝🫒

Some of my favorites on the menu:

Homemade tagliatelle - we learned about the importance of the flour used and we all got our hands dirty and make our own portion! We made our own sauce, apple fritters and (not pictured) fried vegetable croquettes.

Olive ASCOLana - a local treat of the Marche region, specifically here in ASCOLi 🫒🫒🫒 These are deep fried olives stuffed with seasoned meat (we also made a vegetarian version 🤗)

Last week, the EcoGastronomy Dual-Major class of 2023 had the opportunity to attend the Undergraduate Research Conference (URC) for both the UNH Sustainability Institute and UNH Paul College. Each student was required to prepare and present a poster highlighting the research and work they have completed over the past year to fulfill the EcoG capstone requirement.

Special thanks to the UNH Sustainability Institute and Paul College for hosting, Department Head and advisor Dan Winans, EcoG alum and judges Hayley Harmon and Susan Soucy, the judges from UNH Sustainability Institute, the students, friends, family, and faculty who attended, and the many wonderful mentors for each of the students projects.

Congratulations to Reshma, Cate, Teagan, and Gemma who placed at either session, and for all the EcoG students who participated. Your hard work and dedication has not gone unnoticed, and we cannot wait to see what you accomplish post-graduation! 🎓

This past Friday, senior SAFS and EcoG dual-major Cate had the opportunity to visit the headquarters in Middleborough, MA. This was an amazing experience learning about Ocean Spray’s agricultural cooperative of cranberry growers, and the sustainability initiatives of their company. We also got to visit one of the cranberry bogs to talk with a local grower who is apart of the co-op, as well as speak with UNH Alumni who work in a variety of departments for the company! As an EcoG student, it is so important to educate ourselves on where our food is coming from, and get to learn about sustainability within local New England agriculture systems!

“My name is Julia Landcastle, and I am a Senior Nutrition & Wellness and EcoGastronomy dual major. In the Spring of 2022, I had the opportunity to travel to Ascoli Piceno, Italy with the program. While abroad I studied the culture, ethics, and sustainability of the Italian food system. This experience was truly one of the best things I have done with my time here at UNH. The opportunity to participate in hands on experiential learning with local Italian producers and farmers was irreplaceable to my future career path and lifestyle. The UNH in Italy program does an amazing job immersing students in the small medieval city of Ascoli Piceno and its culture while maintaining a strong connection to UNH roots through the EcoGastronomy program. I am so grateful for the learning opportunities, friendships, and memories these two programs have provided me with during my four years at UNH.”

Meet Gemma! Gemma is a senior Nutrtion and Wellness and EcoG dual-major. This past spring semester she had the opportunity to travel to Ascoli Piceno, Italy (via the UNH-in-Italy program) to fulfill her study abroad requirement for EcoG. Read below to hear more about her experience!

“UNH in Italy was an amazing experience I will never forget. I enjoyed living in the beautiful city of Ascoli Piceno while I got immersed in the Italian culture everyday. Getting to learn about the food there was a unique experience not many people get to have, and I enjoyed every bite. I am so grateful for all the stunning places I got to visit and the great friends I made along the way!”
