Ramsey County 4-H Achievement Days and the Lake Region Livestock Expo were held June 17–19 at the Ramsey County Fairgrounds, bringing together more than 70 4-H members and over 25 Cloverbud members for three days of learning, competition, and celebration.

You've maybe heard that it is important to use tested recipes when canning to avoid foodborne illness. It's true! But where can you find safe recipes?

The U.S. Department of Agriculture canning guidelines underwent a major overhaul in 1994, and in 2006, canning guidelines were reviewed and revised. Follow only current research-tested canning recipes, such as those from Extension or the National Center for Home Food Preservation.

All about preserving tomatoes! 🍅

To ensure safe acidity in whole, crushed OR juiced tomatoes, add 2 tablespoons of bottled lemon juice or ½ teaspoon of citric acid per quart of tomatoes. For pints, use 1 tablespoon of bottled lemon juice or ¼ teaspoon of citric acid.

Foods such as pickles or salsa need to have an acid added if they are to reach a pH level of 4.6 or lower to prevent microorganism survival and/or growth.
