Step 3: mycelium on bulk
In this case mycelium is growing on hardwood sawdust. A bulk substrate can be a wide variety of materials and combinations often designed for a specific fungal species. The bulk substrate is the last step before mushroom production.

Step 2: mycelium on grain
This is not step one.
Many teachers popularize starting spore to grain. While this can work it has numerous disadvantages.
In contrast "liquid culture" to grain is good practice and might be a good first step if you buy a culture from a reputable source.
The primary goal of grain is expansion and secondarily nutrition.

Step one. Mycelium on Agar.
While there are many ways to avoid using Agar plates. This material makes it possible to separate competing organisms, isolate single spores, separate different genotypes, intentionally combine monokaryotic mycelium to carefully direct genetic combination, diagnose procedural problems and many other applications.
Many popular cultivation teks do not have this versatility.
Agar is a gel that makes a surface for all these processes. An alternative is gellan gum.

This year started an obsession with single origin theobroma cacao.
Food of the gods.
Cacao was a part of a multi content trade economy from south and north America during the time of the pueblo people of Mesa Verde in southern Colorado.
My passion for the raw unsweetened flavor of single origin cacao started with a flight of tasting chocolate from . The distinct flavors from Mexico, Dominican republic, Brazil and others absolutely shocked me.
Today we have beans from Tabasco México and semuliki Uganda. They smell of fruity fermented wine. Once ground the true flavors will explode on the tongue.
The dominant flavor of raw cacao is definitely the bitters. In time a person can learn to appreciate a variety of bitters without the help of sweetener
