Very excited to be back doing in-person Cooking Matters classes this fall! Our first class is with in collaboration with HelpLine of Delaware and Morrow Counties, Inc. at the St. Michael’s community. They will be installing a community garden so we’re focusing on recipes with a range of vegetables and herbs in preparation for planning the garden! Week one was ratatouille (eggplant, onion, zucchini, okra, tomato, garlic) over pasta!

Hi everyone! It's again - back to being Thursday this week!

This week's recipe is one of our most popular - black bean and veggie quesadillas! In this week's video, Morgan (a 2020 grad and exercise science major) shares how to make the recipe - it has been popular among both kids and adults in our classes, and is great because you can use a wide range of vegetables. Morgan uses peppers, mushrooms, onions, and more!

OK, so it's Friday - we hope you'll forgive us for being a day late with . This video from Abby, a 2020 OWU graduate in Nutrition, is so good that it took us an extra day to get it posted.

This is such a flexible pasta dish - you can use such a wide range of veggies and preparations. In this pandemic time, flexibility is key as we try to minimize visits to the grocery store and save money by using all of our pantry and freezer staples! Don't forget to look in the video description on YouTube for the recipe and for handouts on varying your veggies, and on cooking veggies three different ways. It's again and we have a great recipe for you - a lentil tortilla soup that is a hit EVERY time we make it in our classes. Also, if you've been thinking about finding a recipe that uses less meat because of cost, shortages of meat at the store, or for any other reason - this is the recipe for you. The flavors are awesome, and the ingredients are flexible, which is so important in this time.

This video features Tim Robinson, one of our awesome nutrition majors - and a graduating senior. It's been a crazy last semester for Tim, but we wish him all of the best as he moves on from OWU to what is sure to be an outstanding and successful future. Enjoy, and stay safe!

It's been a bit since we've posted - we hope you're all doing well and staying safe! Our Cooking Matters team has been hard at work preparing weekly videos for a series we're calling "Cooking Matters Thursdays," where we will highlight our student Cooking Matters instructors who have made cooking class videos that focus on healthy eating on a budget, while using flexible ingredients. We know that visits to the grocery store should be few and far between where possible, and that the store isn't always fully stocked with what is on your list. We hope this videos help you with ideas about how to be flexible, and make tasty, affordable, healthy food.

This week our Cooking Matters team began a new program with the Delaware City Schools summer lunch program at Woodward School. Every Monday we’ll be doing a new taste education event, where we feature different foods for the kids to try, and they can tell us which foods they enjoy, and which they don’t. We talk to them about the flavors and textures they sense, and why these appeal to them or not. The first week we did cheeses, and next week we’ll feature unusual fruits. The cheese most enjoyed by the kids was the goat cheese!
