We’re taking over the Windsor Hotel for a night of fire-roasted madness, fresh tomatillo sorcery, and chile-oil alchemy. This isn’t your average chips-and-dip situation. This is hands-on, high-heat, high-flavor salsa science with Chef Tim at the helm, guiding you through three elemental styles that’ll have you questioning every sad little jar in your fridge.

Come get messy, taste everything, and learn how to balance heat, acid, and salt like a salsa-making wizard. The class kicks off at 6pm, and trust us - you’ll want a seat at this table. The best way to lock one in? Call 719-782-0062 and say the magic words: “I crave the heat.”

This Sunday… the squid takes center stage.

You’ve had calamari. You’ve had it fried, frozen, and occasionally overcooked to the consistency of pencil erasers. But have you ever learned to truly cook squid? To make it tender, bold, and weirdly elegant? That’s what we’re doing at this week’s 𝐂𝐨𝐨𝐤𝐢𝐧𝐠 𝐰𝐢𝐭𝐡 𝐂𝐡𝐞𝐟 𝐓𝐢𝐦 class - no deep fryer in sight.

We’re talking ink, tentacles, Mediterranean slow-braises, and tricks from the sea gods themselves. Class starts at 𝟔𝐏𝐌. Come hungry. Come brave. Come ready to embrace the ink.

🦑 𝐓𝐇𝐈𝐒 𝐒𝐔𝐍𝐃𝐀𝐘 @ 𝟔𝐏𝐌 – 𝐂𝐎𝐎𝐊𝐈𝐍𝐆 𝐖𝐈𝐓𝐇 𝐂𝐇𝐄𝐅 𝐓𝐈𝐌 𝐆𝐎𝐄𝐒 𝐅𝐔𝐋𝐋 𝐒𝐐𝐔𝐈𝐃. 🦑

We’re stepping beyond calamari rings and into the shadowy depths of flavor. This week’s class is a tentacled tribute to the mighty squid - ink, arms, and all. We’ll tackle texture, technique, and turn this humble cephalopod into cuisine that’ll make Poseidon weep. Forget everything you think you know about squid. We’re not frying - we’re finessing.

Seats are limited, knives will be sharp, and the squid shall be glorious. Sunday. 6PM. Don’t flake, don’t ghost, and definitely don’t bring ketchup. Reservations are encouraged.

There are few things in life more satisfying than sealing a bit of flavorful mystery inside a soft pouch of dough and then sizzling that pouch to golden-bottomed perfection in a skillet that has seen some things. Tomorrow night, Sunday June 8th, join us - 𝑪𝒐𝒐𝒌𝒊𝒏𝒈 𝒘𝒊𝒕𝒉 𝑪𝒉𝒆𝒇 𝑻𝒊𝒎 - as we dive wrist-deep into the arcane and delightfully tactile art of dumpling-making. We’ll conjure dough from flour and hot water, fold it with care, and coax these little half-moons of joy into their final, crispy-steamed form - all with nothing more than a rolling pin, a pan, and our wits.

Expect flour on your hands, a smug sense of accomplishment, and maybe even a newfound respect for the pan-fried arts. It's culinary spellcraft meets skillet combat, and you - yes 𝒚𝒐𝒖 - will be the hero of this doughy epic. No previous enchantments required. Do you know how to make tortillas? These people do! And not just any tortillas—hand-pressed, hot-off-the-comal, perfectly puffed discs of joy that could make your abuela weep tears of pride. Huge thanks to everyone who joined us for another delicious night of Cooking with Chef Tim—we mixed, we rolled, we sizzled, and then we stuffed those bad boys with all manner of taco treasures.

There was laughter, there was learning, and there may have been a few spontaneous salsa dances (the sauce and the moves). Stay tuned for next month’s class—we’re just getting warmed up.
