We’re welcoming a familiar face back to the Ukwakhwa kitchen! 🦬🌽🍒

Returning guest Chef Anthony Warrior is preparing our next From Seed to Table hot meal on Wednesday, August 26, and he’s bringing together some incredible Indigenous ingredients and flavors.

On the menu is Chokecherry Braised Bison with Cranberry Gastrique, served with Three Sisters boiled bread (kan^stahole) over a smooth pumpkin purée. The plate is completed with dried berry wild rice and pumpkin seeds. 🦬🎃🫐

And to drink, Cranberry Cedar Tea 🌿☕

This is a meal that brings together bison, corn, berries, wild rice, pumpkin, and cedar in one thoughtfully prepared plate. We’re excited to have Chef Anthony back and can’t wait for the community to try what he’s created!

Before the weekend ends, we wanted to share what 7 days of hard work has looked like at Ukwakhwa 🌱 This is our third time hosting a Pack Basket class and we couldn’t do it without our fearless leaders Liandra Skenandore and Rae Skenandore! Huge shout out to Stephen Webster and Nicholas Metoxen for their part in the woodworking and leather working components.

The Pack Basket is the 100 hour basket. From harvest, to log pounding, to splitting splints, to finished product, around 100 hours have been put into this vessel. Now there are 14 more introduced into the world!

In this weeks Ukwakhwa meal prep class, we had Michele Doxtator show us how to make your own beef bone broth from scratch! This was a good one and kinda tricky. However with a significant amount of prepping and a format that had “through the magic of television” that allowed us to skip the parts of letting it cook for 10 hours….each participant got hands on experience and was able to take home a few quarts! Thanks again to the Wisconsin Partnership Program for allowing us to provide this kind of classes to our community!

Chante has been with the farm the last few years and today is his last day as he heads off to Colorado to start college. What can we say about this young man…his work ethic, his smile, humor, his attitude….I think most people who’ve met him would know about that. I wish more folks could see the level of heart he has for people in his life and the things he puts his mind to. That being said we are excited for this young man to start this new chapter in his life….to grow and test himself. I know you’ll do great but we sure are going to miss seeing him bright and early with his breakfast pizza & energy drinks!
