WINTER SQUASH!
These squash varieties are grown for winter storage. Once cured, most require nothing more than a cool, dry, dark place to keep for months. This group of squash includes well known varieties like pumpkins, acorn, butternut, spaghetti squash, and delicata. Also some lesser known like dumpling squash, honeyboat, buttercup, and mashed potato squash. Most of these have a yellow or orange flesh. They are very low in calories, even though they are usually quite sweet, and they help to keep blood sugar stable! They are high in beta carotene and vitamin A. They also provide vitamin C for immune health, Potassium for a healthy heart, and Magnesium for bone strength! They are high fiber, low fat food. Besides the fact that they are extremely good for you, they are also delicious!

My favorite winter squash is delicata! I love it sliced thin and baked at 450° for about 30 mins with a drizzle of honey and a pinch of salt!

BEANS!
Some say snap beans or string beans...they come in many shapes, and colors. Pole or bush. Yellow, purple, or the traditional green. They grow in most every backyard garden, and why would they not? They are very easy to grow, and delicious! Beans have only about 30 calories per serving but boast high amounts of vitamin K,C,A, folate, manganese, and potassium! They are also high in fiber! Beans promote healthy hearts, help regulate blold sugar, and improve bone strength! Our favorite is called Dragon's Tongue beans and are striped yellow and purple when raw. They fade to just yellow when cooked, but we eat most of them raw before they get to the kitchen.

I do not grow too many peppers. This year I am growing all sweet peppers. My grandkids like to pick and eat them in the garden. That is fine with me. Peppers are full of vitamins A,C, and B6, as well as fiber and antioxidents! They range in flavor from sweet to dangerously hot.

So all of these cucumbers (minus the ones I ate for lunch) are now fermenting into yummy pickles!
It is the easiest way to preserve cucumbers. Plus they stay crunchy, and are even more healthy!

To ferment cucumbers wash and sort your cukes, and cut off the blossom end. Pack them tightly into clean glass jars with herbs of your choice (I used dill and garlic) dissolve 1½tbs of salt for every 3c of water and top off the cucumbers making sure they are all covered. Close the jar. Each day take the lid off of your jar to let out any built up pressure. The brine will start to bubble in a few days and your pickles will be ready in about a week. Taste them at about 5 days and if they taste good to you, put them in the fridge and enjoy eating them!

Everyone loves cucumbers!
They are delicious straight from the vine, pickled, fermented. You can add them to a smoothie or a dip. Or, add a few slices to your water!

Cucumbers are so good for you! They are 96% water and promote better hydration! They are good for digestion, since they are high in fiber and they feed gut bacteria! Cucumbers are high in vitamins C,K, magnesium and Potassium, as well as antioxidents! They even help regulate blood sugar and support in weight loss!

We planted 18 cucumber plants this year. We love pickles and can never have too many!

The heat finally got to the broccoli and everything was starting to bolt. So all of the broccoli got harvested today. I cut it up and blanched it and now it is in the freeze dryer. Tomorrow I need to pull the plants and take them to the compost pile.

What should I plant where the broccoli was?

SUMMER SQUASH!
Zucchini, yellow squash, patty pan...they are all growing like crazy with the rain and warm temperatures!
They are so versatile and easy to grow they should be included in every backyard garden. You can shred them and put them in muffins, slice them and fry them, or dry them and make flour. Sweet and savory alike. They usually get taken out by vine borers or squash bugs so we always plant more later in the season.

Squash have male and female flowers. The male flowers are attached to the end of a long thin stem. The female flowers are attached to the end of a tiny squash. If the female flower is not pollonated with pollen from a male flower, the baby squash will not grow.

Once they get started, summer squash can grow very fast..so check them daily!

Here is a recipe for zucchini crisp
(they won't know it's not apples)

Ingredients
8 cups cubed peeled zucchini

½ cup white sugar

⅓ cup lemon juice

2 teaspoons ground cinnamon

1 teaspoon ground nutmeg

1 cup packed brown sugar

1 cup rolled oats

1 cup all-purpose flour

½ cup margarine

Directions
Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.

Combine zucchini, sugar, lemon juice, cinnamon, and nutmeg in a large bowl; transfer to the prepared baking dish.

Combine brown sugar, oats, and flour in a separate bowl; cut in margarine until mixture resembles coarse crumbs. Sprinkle crumb mixture over zucchini mixture.

Bake in the preheated oven until bubbly and zucchini is tender, 40 to 45 minutes.

No garden pictures today since it is raining....but I am posting a reminder that everything does not have to always be perfect. I started my sourdough sandwich bread this morning like always, but with the air conditioner, it is cool in the house so I put the bread to rise on top of the stove while I baked lunch. Well, it rose, a bunch! I could have gotten upset, butimstead I just put the dough that escaped back in the pan and baked it. It is not perfect, but nobody cares. My family has a delicious loaf of bread to go with dinner. It is ok to not be perfect.

KOHLRABI!

Kohlrabi is a less known vegetable, but if people knew how delicious it is, and so easy to grow, we would see it in more backyard gardens! Kohlrabi comes in purple and white varities, both have the same flavor. It tastes like broccoli and is crisp and juicy if you pick it early enough. Kohlrabi is high in vitamin C and Potassium. After peeling it it can be eaten raw, fermented or cooked. The leaves are also good to eat and are similar to collards.
