Yesterday Honey & Hive Boards was one of the exclusive charcuterie vendors to be hosted by the and for a day of tasting and learning about Italy’s most iconic cheeses.

We learned how to appreciate a variety of Italian cheese based on appearance, aroma, texture & flavor. We discovered some new cheese selections that we look forward to including on future grazing tables and charcuterie arrangements.

This 10’ multidimensional grazing table was designed to be as memorable as the celebration itself, featuring layered heights, abundant textures, and an artful selection of cheeses, charcuterie, fresh fruit, seasonal accompaniments, and sweet bites. Every angle offered guests something new to discover.

Set against the beautiful backdrop of the Anaheim Hills Golf Club, this spread became more than just cocktail hour…it became a gathering place where conversations started, glasses clinked, and memories were made.

Hanging amaranthus is beautiful on grazing tables, floral installations, and event displays, but it can be delicate if not prepped correctly.

Fresh Hanging Amaranthus

1. Unwrap the stems carefully and remove any leaves.
2. Give each stem a fresh diagonal cut (about ½–1 inch).
3. Place immediately into clean water with flower food.
4. Hydrate for at least 4–6 hours (overnight is even better) in a cool space.
5. Keep away from direct sun, heat, and ripening fruit while conditioning.

Before Designing

* Gently shake the stems to remove any loose seeds or debris.
* Inspect the tails and trim off any damaged or wilted sections.
* If the hanging tails are very long, support them during transport so they don’t kink or snap.
* For grazing table installations, add the amaranthus last to avoid crushing the delicate strands.

Tips for Events

* Fresh green amaranthus tends to be hardier than burgundy varieties.
* If using in warm outdoor conditions, keep the stems in water until the last possible moment.
* For floral foam or chicken-wire arrangements, make sure the stems are fully hydrated first since amaranthus wilts quickly when thirsty.

For a Grazing Table

A few cascading stems tucked along the front edge or spilling from elevated boards creates a lush, garden-inspired look without blocking access to the food. The long draping tails pair especially well with eucalyptus, olives, figs, grapes, and soft cheeses.
