Week 6: Yushin
Ok disclaimer: Iām not vegetarian. At first I was nervous about making this post because I thought it wouldnāt be authentic or credible. But upon reflecting on the foods I like, I realized that most of them are vegetarian. Even if Iām not 100% vegetarian, I can still choose to eat ethical AND delicious foods bc theyāre all around me! Pictured above is my absolute favorite dish to pair with rice: tomato egg and tofu stir fry. I actually eat this like 3 or 4 days a weekš
. Itās sooo easy to make. You just need eggs, tomatoes, tofu, and optionally scallions. Shookest moment of my life was realizing that most ppl make it w/out tofuš± so if you leave that out itās even easier! Week 6: Kuanhung

Week 5: Shing
Hey guys, hope everyone is safe and well! If you are, thank goodness, but then you probably are at home with more than enough time on your hands to try cooking (for the first time in forever for a lot⦠oh who am I kidding, most of you! Yeah I see yāall) for either yourself or loved ones! If so, I recommend something simultaneously easy yet somehow still extra fancy for that special treat when the gazillionth day in quarantine just aināt it anymore - tomato, spinach, and white mushroom stir-fry omelette with a side of cut-up bananas! I went the extra mile and lightly garnished mine with parsley, and thankfully my grandma, who this brunch was for, liked that probably somewhat odd combo! Week 5: Ramneet
Ever since I was a child, my family went out of its way to devote at least one entire day to eating solely vegetarian. However, now that Iām older and more responsible for my own food choices, I find myself dedicating more and more days of the week towards discovering vegetarian food options around me. The dishes of my familyās homeland are already full of amazingly complex and beautifully simple vegetarian meals, and Iām so happy that Iāll be able to delve more into the foods my parents grew up with! Attending this past Novemberās Veggie Cooking Night also introduced me to several new vegetarian dishes, and increased my interest in venturing outside my comfort zone and hopefully improving upon my picky tastes :ā) Not only will eating vegetarian help me in becoming more adventurous, it will help me lessen the impact of my actions on the planet itself. The following image depicts one of my momās many amazing home cooked meals: nutri soya chunk and potato curry over rice with a side of homemade yogurt!

Week 4: Dennis
While we are all at home during these times, it is a great opportunity to find the time to learn new things. One such topic, which we are promoting today, is how to practice a vegetarian or vegan diet. Today, I will be sharing with you vegan tacos I made the other day. The ingredients are simpleācorn tortillas, vegan chorizo (Trader Joeās), peppers, salsa verde, hot sauce, corn. Of course, you are free to add any ingredients you wish. To me, creating vegetarian dishes can be as simple as stir-frying vegetables and some form of plant-based protein. All you need is an open-mind and some research. I had to do some research when I first began eating vegetarian in 2011 in order to make sure I was able to get all the nourishment I need. In fact, I found out that I was able to get all the necessary vitamins and proteins from plant-based sources. There are many opportunities to be creative when coming up with vegetarian dishes, and I think it is possible for anyone to try. Eating vegetarian for a single day a week, or even for a single meal each day, can make a positive impact on the world. Week 3: Fiona
Want to try a vegetarian dish? Contrary to popular belief, thereās actually a lot of tasty vegetarian food options out there. One specific vegetarian dish that I really enjoy eating is the one that my mom often cooks. This dish is sesame noodles, but it is most commonly known as ma jiang mian. It is a simple dish as it generally consists of thick noodles mixed with sesame sauce. However, you can definitely get creative with this dish as my mom had. In order to increase the amount of nutrients in this dish she added carrots, edamame, corn, and tofu. Want to spice things up a bit? Feel free to add some spicy sauce along with the sesame sauce. Week 2: Noor
When I went to a restaurant and ordered a veggie burger, I didnāt really read the menu and all I knew was that this was one of the vegetarian options I had available to me. I was stunned when I looked at the sandwich and saw that it wasnāt just an āordinaryā veggie burger--it was a falafel burger! Falafel is something I ate a lot growing up (easily fried if you have a pre-made mix), and I had eaten it in pita sandwiches, but never before as a burger! It was a surprisingly great concept, both in theory and in practice (i.e. it tastes really good). Now you may not like falafel, and (while I strongly disagree) thatās fine! But this is just one of many examples of ways you can creatively make vegetarian versions of all kinds of food, without much effort at all. And now that weāre all at home and we need ways to mix up our days, we have an opportunity to eat vegetarian a little more creatively!
