SUSHI!!!

We hosted our first ever sushi event with some amazing, enthusiastic guests and friends! Combining fresh product from renowned fish market, Kanaloa, Santa Barbara, CA, delicious sushi rice with an energetic crew and the results were predictable - another memorable night at CSCE!

On the menu:
Western Rolls - California, North Shore and Dragon
Traditional - Nigiri and Sashimi

Product:
Hamachi (Yellow Tail), Ahi Tuna, Dungeness Crab and Wild Spot Prawn

Fun with hors d'oeuvres!

CSCE Youth enjoyed an afternoon making hors d’oeuvres. On the menu: Mexican Truffles and BLT Bites.

This fall’s class is amazing - engaged, energetic, team-oriented and fun! They exemplify the values that CSCE chefs strive to foster.

Sushi Making Event
September 14, 2019
2:00 pm - 6:00 pm

Enjoy a hands-on sushi making experience and learn the evolving culinary history of sushi. Participants will experience the traditional techniques of making sushi rice, classic rolls, nigiri and sashimi. This class culminates with a delicious and beautiful sushi feast with complimentary beverages.

CSCE Youth Summer Camp 4

An energetic, inquisitive and fun group of students spent a week preparing our favorite, Asian inspired, four-course luncheon for their special guests.

Every group of campers is unique and this group distinguished themselves as attentive, inquisitive and hard-working. In addition, they worked well together - a GREAT attribute in the kitchen!

We look forward to seeing all of them back at CSCE in the future!

CSCE 2019 Youth Summer Camp 3

In a word..AMAZING!

This group of youth was loaded with talent, dedication and completely sold on the value of working as a team. EVERY camp has its own personality and rewards for CSCE’s teaching Chefs, Chuck and Jodi. Summer Camp 3 was a special reward for our mission and vision of making a positive impact in the lives of Colorado Springs youth.

They delivered a delicious, Asian inspired, four course meal for their special guests. The platings were befitting of fine dining and they participated in all the prep, formal table setting and service.

CSCE 2019 Summer Camp 2

We enjoyed a wonderful group of campers this week! They worked so well together! Several of our campers were former students and they welcomed the newcomers with open arms.

Teaching youth to cook is just a part of the focus at CSCE; mise en place (everything in its place), teamwork, respect for self and others and having fun round out the experience.

This group met these goals with flying colors!!!

CSCE’s 2019 Youth Summer Camp 1

Today we enjoyed a fabulous ending to our first Youth Summer Camp of 2019! Our youth served their guests four delicious courses of artisan gnocchi soup, peach and heirloom tomato burrata salad with balsamic pearls and glaze, scaloppine of chicken with grapefruit and pink peppercorns and a sweet ending of creme anglaise ice cream with blueberry sauce and a butter cookie.

The youth worked well together as a team, learning formal table setting and proper service etiquette. From the back-of-the-house, they prepped and plated every course for their special guests.

CSCE teaches the beautiful values and art of hospitality, including teamwork and respect for others. As a universal culinary concept we stress the importance of mise en place, French for “in its place”. This means, EVERYTHING in its place, INCLUDING one’s mind.

A special thanks to our youth and their amazing supportive parents for making this past week memorable!!!

CSCE enjoyed an amazing nigh with our dear friend and renowned Colorado Springs chef, Mark LeFebvre! On the menu tonight: Beet Chips & Dip with duck confit, lemon whipped ricotta, dill, duck cracklings and Pan Seared Duck Breast with butternut squash, orange, fennel, vanilla scented duck jus.
