Today, my students participated in a gallery walk featuring restaurant promotional items I have collected over the years. They examined the items to see how restaurants use creative merchandise, product samples, packaging, and giveaways to market their brands and connect with customers.

As a ProStart school, Brazoswood High School is a member of the Texas Restaurant Association. This membership gives our culinary instructors the opportunity to attend the Texas Restaurant Show at no charge, where we can explore current industry trends, discover new products, connect with professionals, and collect real-world examples to bring back to the classroom. This year’s show featured an incredible 602 vendors!

Experiences like today’s gallery walk help our students connect classroom lessons in restaurant marketing and promotion to the real hospitality industry.

Final cooking lab of the year. Years 3 and 4 students had to plan and execute 3 different dessert styles, a verrine, an entremet and a tart. Three desserts was quite the task. Some students were very successful and I'm proud of them all.

Tonight we held our first official Culinary CTSO student and parent meeting. We discussed competition opportunities for students in the 2026-2027 school year.

We also announced our first official student leadership officers! Big congratulations to these student officers:

Secretary- Hailee Paul
Historian- Finn Walton

Mr. Lewis’ students brought creativity and entrepreneurship to life through their Food Truck Project Lab. From developing original concepts and branding to designing menus and presenting their final vision, they transformed ideas into realistic business models. Featuring everything from gourmet burgers and street tacos to authentic Thai and Indian-inspired cuisines, each showcased innovation, culture, and culinary passion.

Still incredibly proud of my first-time competitors Kateland Garnett, Kar’Leigh King, June Riel, Marlene Amezcua and their impressive 3rd place finish! Be sure to watch the video to relive the moment we found out.

We also had the honor of meeting and being recognized by Kristen Kish, renowned chef, restaurateur, winner of Top Chef Season 10, and current host of the series.
