Here is another healthy recipe for childcare centers and families to use. 2 cups of whole wheat pasta bowtie, one table spoon of extra virgin olive oil, one table spoon of minced garlic, one 16 oz bag of frozen peas and carrots mixed, 2 cups of low sodium chicken broth, one table spoon of dried parsley, one tablespoon of fresh lemon zest grated from a thin layer of lemon peel, 1/4 of teaspoon of pepper, 2 tablespoon of corn starch. Cooking instructions: 4 quart pot bring 3 quarts of water to a boil and add pasta, cook pasta according to pasta packing directions, drain after cooking, meanwhile heat olive oil and garlic in a sautee pan, cook until soft, add peas and carrots to pan and cook veggies throurly, in a bowel combine cornstarch and chicken broth, stir mixture well, add mixture to pan bring to a boil and then let simmer for one min., add parsley, pasta, lemon zest and pepper, toss gently, cook until pasta is hot. This dish was a big hit with my kids. I topped it with a sprinkle of parmesan cheese.
