2nd class of the day Gluten Free Buckwheat Blini! I’ve never heard of blini before but, be sure, I’ll make it again. We started with raw buckwheat, washed it thoroughly and mixed it in a high speed blender with buttermilk overnight. Added to it were yeast, fresh eggs, leavenings, powdered milk, melted butter, and vanilla. Then each student took turns ladling out the batter onto a hot griddle to cook watching for the bubbles to know when to flip. The finished product was so good…each of the younger students had three!
Buckwheat is act a seed…a member of the rhubarb family. It has a nutty flavor and is packed with nutrients including protein and fiber…who knew? Yum…sort of likes crepes in that one can choose to make them savory or sweet. I chose smoked salmon with cream cheese as well as my friend and the younger students chose cinnamon sugar and butter. I told everyone I’m learning right along with them.👩🍳
