This recipe is easy with few ingredients, a short prep and cooking time and substitute friendly. Very tasty and nice on a cold winter day. Took about an hour and a half start to finish.
I used Owens breakfast sausage instead of an Italian link type, I didn't have mushrooms in the fridge and I used canned green beans.

Italian Cream Cake

1 stick butter
1/2 Cup Vegetable shortening
2 cups sugar
5 egg yolks
5 whites stiffly beaten
2 cups flour
1 teaspoon baking soda
1 cup butter milk (or 1 cup milk w 1 teaspoon white vinegar)
1 teaspoon vanilla
1 small can coconut( I use about a cup and a half from a bag)
1 cup chopped nuts ( I used pecans)

1) Cream butter and shortening.
2)Add sugar and beat til smooth
3)Add yolks and beat using mixer on high fro 2 minutes
4)In separate bowl, Combine flour and soda. Add to mixture alternately with butter milk
5 Stir in vanilla
6) Add coconut and nuts.
7) Fold in egg whites

Place in 3 well greased and floured 8 inch round cake pans.
Bake at 350 degrees for 25 minutes or until tooth pick comes out clean.

Frosting

1 8 oz package cream cheese, softened
1/2 stick butter, softened
1 box confectioners sugar (4 cups)
1 cup chopped nuts

1) Beat cheese and butter until smooth
2) Add sugar and mix well
3) Add nuts
4) spread on cake between each layer and on top and sides
I added some coconut between the layers and patted some on the sides. Put nuts on top.

Soup and bread are good for winter camping food.

Hamburger Minestrone Soup

Brown 1 # hamburger and drain.
1 can tomato sauce. I prefer 2 cups if V8
4 cups of water. Add more as needed.
1 can green beans or any left over veggies you may have on hand
Cube up about 2 medium potatoes
sliced carrots
Chopped broccoli or cabbage
1 can kidney beans drained and rinsed
2 bay leaves
1 Chopped onion
1/4 cup rice ( optional, also don't add if you plan to can the soup)
Thyme. Sprinkle liberally over the top of the soup. Sorry I don't measure this. Sometimes I have to add more if the taste doesn't suit me)
Salt to taste
You can put it in a crock pot or cook in a soup pot until veggies are tender

Chicken Tortilla Soup:
Cook 2 whole boneless, skinless chicken breasts in a Tbs of olive olive oil. I season with salt and pepper. Set aside. Mix 1 1/2 tsp. cumin, 1 tsp. chili powder, 1/2 tsp. garlic powder, and 1/2 tsp of salt in small bowl. Add one Tbs olive oil to large soup pot cook 1 c. chopped onions, 1/4 c. diced green bell pepper, 1/4 c. diced red bell pepper and 3 minced cloves of garlic.. Then add the seasoning mixture. then add the following ingredients and simmer for an hour: 1 can Rotel, 32 ounces chicken stock, 3 tbls. tomato paste, 4 c. hot water, 1 can black beans rinsed and drained , and I like to add a little corn. Serve with fried corn tortilla strips ( I just used chips) and avocado if you like

This is one of my quick and easy favorites.

Chicken Enchiladas
1 rotisserie chicken
1 block cream cheese
1 cup salsa of your choice
1 cup grated cheese of your choice ( I like sharp white cheddar)
12-14 corn tortillas
1 15 ounce can of Green Chile Enchilada sauce or red if you prefer
3 chopped green onions for garnish
additional grated cheese for the top

Pick meat off chicken.
In a skillet pour in salsa and add cream cheese.
Over low heat sir until cream cheese is melted and combined with salsa.
Mix in cheese and then the chicken meat.
Put the tortillas in a bowl and cover with plastic wrap. Warm tortillas in microwave for about a minute or less.
Pour a little sauce in the bottom of a 9X11 baking dish. Just enough to coat the bottom.
Put about 2 tablespoons of filling in the middle of each tortilla and roll. line up the enchiladas in the dish.
Pour remainder of sauce over them.
Put some grated cheese on top of each.
Garnish the top of all with onions.
Baked in preheated 350 degree oven for 20-30 minutes until heated through.
If you're in a hurry...after you cover the bottom of the pan with small amount of sauce you can just make a layer of tortillas and spread the filling on top and cover with another layer of tortillas. then pour sauce over it, add cheese and onions and bake as above.

Sour Dough Pancakes
I like this recipe because I don't have to start it the night before. I make only half the recipe for the 2 of us and its more than enough. These pancakes are moist and fluffy! Very easy to make. 5 stars!!!

2 eggs
1 cup milk
1 & 1/2 cups starter
1 teaspoon baking soda
1 teaspoon sea salt
1/4 cup sugar
1/4 cup melted butter
1 teaspoon vanilla
1/4 cup Greek yogurt (optional, I have made them with and without.)
Mix all ingredients and let it rest for 30 minutes before using.
