HIRING: Be part of a one of kind course in our culinary program! The Dining Room Instructor teaches culinary and hospitality students how to run a restaurant in our very own student run dining room open to the public. Students rotate through all front of house positions learning upscale service techniques 4 nights a week and 1 night a week run banquet service. Small intimate setting with full bar and reservation only seating’s to a fixed price menu overlooking millennium park. This is a full time faculty position. We are looking for an Associate Director of Culinary Operations who will be responsible for driving the innovation and evolution of culinary school kitchen design and efficiencies while inspiring the performance of Kendall College’s faculty. This role works to ensure ex*****on of the highest quality food standards and is responsible for compliance with company policies, procedures, safety, and labor laws. The Associate Director partners with NLU facilities to ensure restaurants are maintained in like-new condition and that safety and sanitation procedures are in place. Key focus on storeroom supervision, culinary operations to systems and processes, leading standards of operational excellence through procurement and cost management to ensure budgets to the operations of the culinary programs are met.

Alumni David Flier, owner of Rockin Dave’s Bistro and Backstage Lounge, in Bend, Oregon has been selected to appear on the Food Network Channel on Drive-ins, Diners, and Dives. The show that features Guy Fieri highlights restaurants and some of their special foods. The segment is entitled “Sandwiches and Spices” and airs TONIGHT at 8 pm CST. Make sure you tune in!

It is with a heavy heart that we share the passing of our friend, mentor and chef – Walter Freund. We have heard from his family that he passed away peacefully in his home with his family this past Saturday, August 21st. Walter has left his legacy in the hearts of all those who knew and loved him. Students, friends and colleagues will forever carry a piece of Walter with them, in the kitchens and in life.

We have many wonderful stories of Walter and we hope you’ll leave a memory in the comments below for everyone to reflect and smile upon.

ALUMNI SPOTLIGHT: Meet the creators of Pen & Lo Baking Co. Mallory Swanson and Erin Kobler. These two began their Kendall College career in the baking and pastry program in 2013. After graduating in 2015 Mallory began working for Kimpton Hotels and Erin began working for Boka Restaurant Group. Fast forward to 2020. When the industry took a hit due to Covid-19 pandemic, Erin and Mallory teamed up together to find a new and creative way to serve their community. Mallory and Erin created Pen & Lo Baking Co. where they’ve been making custom decorated sugar cookies and small cakes. They have also been hosting and teaching decorating classes. The two have loved being able to work together and share their love for pastry with their new found community. Follow along with their new venture on Instagram !
