Gale Gand is a pastry chef and had the Michelin two-star restaurant, Tru, in Chicago. She hosted Food Network’s show “Sweet Dreams”, has written 8 cookbooks, and worked with Julia Child on her book and PBS series, “Baking with Julia”. Gale teaches cooking classes, has an artisanal root beer company, and has 2 James Beard Awards. She is a professional Pie and Food Competition Judge, having just fin

ished judging on the new series “Gingerbread Land” on Magnolia and Food Network, and is a professional Storyteller. In 2022 she cooked in Poland and Ukraine with Jose Andres’ World Central Kitchen. This past May Gale went to her family’s homeland of Hungary, and Austria for a month to study their pastries and culture. She is the mother of 3, has a BFA from RIT in Metalsmithing, and plays the ukulele.

Found a sweet little newish pastry shop in Vernon Hills IL, Lavish. Nice Cardamom Kouign-amann, moist Orange Almond Tea Cake (GF-who knew?), and tender Cherry filled Pistachio Shortbread Cookie. Good looking cinnamon roll and delicious Cappucino too!

I spent a week with my friend Judy in the Hamptons, Jersey City, and New York City. Stayed with my friend since kindergarten, Jim Kafadar and his wife Robison. Saw the iconic “Stanley’s Bakery” Jimmy Seidita always raves about and his childhood home in East Islip, had mini Lobster rolls and clam chowder at Lunch in Amagansett, linguini and clams and great tomatoes with Burata in South Hampton, went to Cooper beach, made dinner for our hosts, went to a salvage store in NYC, saw aunt Greta, plus Lillys Victorian Establishment, quick Sabret hot dog at 53rd and 6th, went to some Italian bakeries in Jersey City for eggplant sandwiches, Choc au Pain for mini chocolate babka, then got a French Onion Soup Grilled Cheese at Von Hook. There’s great food everywhere!

Since I was in Wisconsin I thought I’d do some “work” investigating what some say is THE best eclair. 2 top contenders are La Brioche in Madison and Pine Cone Bakery in Johnson Creek Wisconsin. La Brioche is really a breakfast cafe now after many moves, and called La Brioche True Foods, with bakery cases at the front, one ambient, one refrigerated, and a rack of bread behind it. Pine Cone Bakery is also at the entrance of a diner at what’s really a truck stop for gassing up. Both subscribe to the “Bigger is better” school of thought. So bring a friend to share them with. But both were delicious. The custard was slightly better at La Brioche’s ($9.00 served on a plate) but their icing looked a bit seized up. The chocolate icing on Pine Cone’s ($5.50 to go) was a better texture than La Brioche but there was too much of it and it was too sweet. Both had good pate a choux casings.

Quick over night trip to Spring Green Wis to see Shakespeare’s Two Gentlemen of Verona at the American Players Theater, a great little open air theater that just smacks of summer for me. Our hotel, the Round Barn Lodge, had some surprise guests staying there with us!
